There are so many things to love about cocktails. The endless ingredient possibilities, the ability to layer in multiple flavors, pretty colors, fun glassware, garnishes, and of course, the experience of indulging in a spirited beverage. The thing I do not love is a single serving cocktail that requires multiple ingredients. If it’s more complicated than a gin and tonic, it’s unlikely I’m going to bother unless I can make multiple servings at a time. It’s more fun to share anyway and increasingly, the only cocktail recipes I make are versions that can serve a crowd.

I’m always on the lookout for a new pitcher recipe and as soon as I came across this shady blonde punch in a cookbook, I knew I had to try it. It includes so many things I love in a cocktail – gin, citrus, herbal notes, and sparkling wine. The flavor is bright and refreshing, and it’s ideal for slow sipping on a lazy day. This would be lovely for parties and entertaining, but also for enjoying with a small intimate group over many hours. I hope whichever way you go, you try this spiked punch for yourself.

  • Yield 6 servings


  • ½ cup plus 2 tbsp. (150 ml) simple syrup
  • 1½ cups (360 ml) freshly squeezed grapefruit juice
  • ¾ cup (180 ml) Lillet Blanc
  • ¾ cup (180 ml) dry gin
  • Crushed ice, for serving
  • 6 sprigs thyme, for serving
  • 3 cups (720 ml) prosecco or cava, for serving

    In a pitcher, combine the simple syrup, grapefruit juice, Lillet Blanc, and gin. Stir well to combine. Chill until ready to serve.

    Fill 6 serving glasses with crushed ice and add a sprig of thyme to each glass. Divide the grapefruit mixture among the glasses (or fill about halfway if not making all 6 at once) and top off each serving with a pour of Prosecco. Serve immediately.
