I’ve reached that point in summer where everything that isn’t laying by a pool or sitting in the air conditioning doing a puzzle seems like too much work. As a result, anything meant to be refreshment shouldn’t be much more involved than slicing fresh summer tomatoes or watermelon. These coconut margaritas fit the bill quite nicely.

This simple cocktail is easily mixed up in just a few minutes, and gives you those cool and refreshing tropical vibes even if you happen to be locked in a midwestern summer with no ocean in sight. These are incredibly delicious and have just the right potency to provide a pleasant buzz without being too strong.

Though the recipe below is for two servings, I think it would be an exceptionally good idea to scale up the recipe to make a pitcher full of these for a party. In that instance I would forgo the cocktail shaker, pour over ice for each serving, and consider running through the blender before serving maximally creamy and well blended texture. Ingredients

  • 2½ oz. tequila
  • ¾ oz. orange liqueur such as Cointreau
  • 1½ oz. coconut cream
  • 1½ oz. coconut milk
  • ¾ oz.fresh lime juice
  • Splash of simple syrup
  • Lime wedges
  • Toasted coconut salt

Directions

    In a cocktail shaker filled with ice, combine the tequila, orange liqueur, coconut cream, coconut milk, lime juice, and simple syrup. Shake well. Pour into glasses rimmed with toasted coconut salt and filled with ice. Garnish with lime wedges.
