I’ve reached that point in summer where everything that isn’t laying by a pool or sitting in the air conditioning doing a puzzle seems like too much work. As a result, anything meant to be refreshment shouldn’t be much more involved than slicing fresh summer tomatoes or watermelon. These coconut margaritas fit the bill quite nicely.

Though the recipe below is for two servings, I think it would be an exceptionally good idea to scale up the recipe to make a pitcher full of these for a party.
