While this goat cheese spread with garlic and fresh herbs sounds good to me literally all of the time, and while I would gladly eat it at any time of year, I think we are in prime season for it right now. Pair it with some late summer tomatoes with a bit of grilled bread and perhaps a cocktail or glass of sparkling rose. All you need to add is friends and good conversation. I’m not ashamed to admit I’ve been eating the heck out of this lately.


This recipe is a prime example of simplicity at its best. With just a handful of ingredients and literally about five minutes of prep time, the final product is deliciously irresistible. This is absolutely an entertaining staple – something that can be made easily at a moment’s notice, and is sure to be a hit. Use at least three fresh herbs to give it multi-dimensional flavor. My favorite combination is basil, chives, rosemary, and parsley, but I’ve used different combinations and different proportions nearly every time I make it and haven’t found a version I dislike yet.   • Yield about 1 cup

Ingredients

  • 8 oz. soft fresh goat cheese
  • 3 cloves garlic, minced or pressed
  • ½ tsp. ground black pepper
  • 2 tbsp. olive oil
  • ¼ cup chopped mixed fresh herbs (such as basil, chives, rosemary, dill, parsley)
  • Coarse salt, to taste

Directions

    In a small bowl, combine the goat cheese with the garlic, pepper, olive oil, and herbs. Mix together with a spoon until well combined and smooth. Season to taste with salt.

    Transfer to a serving bowl. Drizzle a bit more olive oil over the top. Serve.
