I went ahead and made the executive decision to turn cocktail Friday into cocktail Thursday this week so that you have time to get everything you need in order to enjoy this creepy fun beverage tomorrow on Halloween. What makes a drink more freakishly appealing than floating green eyeballs? Not much.
I have to be honest and admit that my inspiration for this drink was my unwanted yet extensive knowledge of Shrek. (Can we all just agree that the fourth installment with Rumplestiltskin is by far the best of the Shrek movies? Okay, good.) Though I’m not a fan of melon in general, I knew that small melon balls would make a perfect edible eyeball, and a pastry tip made short work of carving out little holes for the blueberry pupils. I served them in blueberry lemonade and the reddish purple hue was a perfect contrast to the green eyeballs. You can, of course, add these to any beverage for additional ick factor. My kids have been adding them to water and find them endlessly amusing. This is a mocktail so that kids can partake but for an adult spin, try adding a splash of sparkling water and either vodka or gin. (I haven’t tried this yet so let me know if you do and what your favorite combo is.) I’ll also be adding them to the kids’ lunch boxes tomorrow along with some monster face sandwiches.
