It has taken me completely by surprise just how much our new house already feels like home. We haven’t been here a full week but we’ve made it through the work week (almost) and have basically maintained our normal routine with family dinners, evening walks, and even some fall baking. We’ve met lots of our neighbors and they are all incredibly kind and welcoming. All of this reinforces for me that this is exactly where we are meant to be. With so much to celebrate, I was definitely in the mood for a bubbly cocktail Friday!

This cocktail is everything I wanted it to be. It’s celebratory. It’s seasonal. It’s sweet and tart and bubbly all at once. And, it’s easy – almost embarrassingly so. Add a few mini scoops of cranberry sorbet to a champagne flute, top off with the bubbles (but slowly! It will fizz – a lot.) Repeat as necessary to celebrate any occasion, big or small. Cheers!

  • Yield 3-4 servings

Ingredients

About 1 cup cranberry sorbet
1 bottle champagne or sparkling white wine

Directions

Place a few small scoops of the sorbet in each champagne flute. Pour champagne over the top, taking your time to allow the fizz to bubble off before topping off a few more times. Serve and enjoy as the sorbet begins to melt into the champagne, replacing each as much and as often as desired.
