I hope you all had a wonderful Thanksgiving holiday!  Our scaled back celebration was very nice and it was good to spend quality time with family and friends.  Even though I enjoy traditional Thanksgiving food, I’ve never been one to go back for multiple helpings, stuff myself, etc.  (It’s not a macaroni and cheese or pizza feast, after all.)  However, I know there are lots of people out there right now who might appreciate some lighter fare to balance out the indulgences we enjoy throughout the holiday season.  There are so many healthy recipes that we love, I thought I’d highlight a few options in case you are looking for inspiration in that area.  In fact, our whole menu plan for this week is on this list.  Enjoy some of our favorite lighter fare!
