In case you haven’t noticed by now, I kind of like smoothies.  They are a perfect breakfast or snack option when I want something light and quick.  Now, I think green smoothies are pretty great but sometimes I don’t have all the ingredients on hand to make them.  This triple berry smoothie actually is a green smoothie with a lovely deep pink disguise.

This blend of frozen berries, banana, and of course spinach can be lightly sweetened to taste with honey or agave syrup.  I also add in a bit of flax seed for extra fiber and omega-3 fatty acids.  For any of you skeptics out there who still haven’t tried green smoothies because you are afraid, this can be your gateway green smoothie.  All you taste is the fruit but you get the extra boost of nutrients from the spinach.  Gotta’ love that!

  • Yield 2 servings

Ingredients

1 ripe banana, peeled
1 cup frozen blueberries
1 cup frozen raspberries
½ cup frozen strawberries
1½ cups baby spinach leaves, loosely packed
1-2 tbsp. ground flax seed (optional)
1 cup orange juice
Agave syrup or honey (optional)

Directions

    Combine the banana, frozen berries, spinach, flax seed, and orange juice in a blender or food processor.  Process until the mixture is fully blended and no green specks remain, about 2 minutes.  If necessary, add more orange juice a splash at a time for a thinner texture.  Taste and if needed, add up to 1 tablespoon of agave syrup or honey to lightly sweeten.  Serve immediately.
