Okay, I’ll admit it. I’m ready for fall. In truth, this is much later in the season than these yearnings typically set in. Last year it was in the first week of June! It’s a bit of a conundrum…I am of course, still very much looking forward to lots more days of grilling out, summer mornings spent at the pool, not to mention the bounty of late summer harvests. But alas, I’m yearning for sweatshirts, cozy mornings reading on the couch wrapped in a blanket, and lovely baked goods with warm fall spices.
I think this apple pie ice cream perfectly bridges the gap and satisfies my desire to continue enjoying summer despite the desire for fall. I started with a French vanilla ice cream base infused with cinnamon and after churning, mixed in caramelized apples and some graham crackers. We are definitely amazed with how much this tastes like apple pie. You could also try mixing in bits of (baked) pie crust if you like, but I opted for the graham crackers because they hold their texture a little better than pie crust. I hope you enjoy this as much as we do. And if you still don’t have an ice cream maker…well, what are you waiting for?!
