It seems when it comes to breakfast food, I have a hard time thinking outside the box.  To me, the choice is either sweet or savory.  Things like waffles, pancakes, etc. are sweet, while eggs and such are savory.  Let’s go ahead and file this one under “Why the heck didn’t I think of that?”  Savory waffles.  But not just savory waffles…savory waffles topped with salsa fried eggs and salsa.  A simple idea, and so brilliant.  That’s what happens when you think outside the box!

Even though I knew we would enjoy this recipe, the meal far surpassed my expectations.  It truly wowed us.  The waffles are exceptional even on their own.  The cornmeal adds an extra dimension of flavor and gives the waffles a lovely crisp texture.  The additions of butter and chives round out the waffle batter to take it from good to great.  Topped with the salsa and eggs – forget about it!  I can’t remember the last time we’ve enjoyed a breakfast dish this much.  We doubled the recipe to feed four adults plus a hungry boy and hungry baby, and had a couple servings for leftovers later on.  We don’t do breakfast for dinner very often, but this is definitely worth working into our weekly dinner menu.

Ingredients

For the waffles:
1¼ cups all-purpose flour
¼ cup yellow cornmeal
1½ tsp. baking powder
1 tsp. sugar
½ tsp. baking soda
½ tsp. salt
¼ tsp. freshly ground black pepper
1/3 cup unsalted butter, melted
2 large eggs
1¼ cups buttermilk
3 tbsp. minced chives
2 tbsp. minced fresh parsley

To serve:
Salsa
Fried eggs
Minced fresh chives, for garnish

Directions

    Preheat a waffle maker according to the manufacturer’s instructions.

    In a large bowl, combine the flour, cornmeal, baking powder, sugar, baking soda, salt, and pepper.  Whisk to blend.  In another bowl, combine the butter, eggs, and buttermilk.  Whisk to blend well.  Stir in the chives and parsley.  Add the wet ingredients to the bowl with the dry ingredients and whisk just until evenly incorporated, taking care not to over-mix.

    Cook the batter in the waffle maker according to the manufacturer’s instructions.  (If necessary, keep finished waffles warm in a 200˚ F oven.)  While the waffles are cooking, fry eggs in a non-stick frying pan.  Serve warm waffles topped with salsa, eggs, and fresh chives.  Season with salt and pepper to taste.
