Do these cupcakes look familiar to you?  If so, that’s because I’ve posted them before.  But here they are again with an improved recipe.  Black forest is a classic flavor combination that just works so well together – chocolate cake, cherry filling and whipped cream frosting.  The first time I posted these cupcakes the cherry filling was not a reliable recipe, and it has been nagging at me ever since.  This time I attempted to find a better filling and good news – I found one!  I considered a version made with fresh cherries but in the end I decided to go with something using frozen cherries so these can be made year round without breaking the bank.  I’ve also swapped out the previous cake recipe for my favorite chocolate cupcake base because it is sturdier, making it easier to fill and also easier to eat.  Now I’m much happier with this recipe and I hope you’ll try the new and improved version!

  • Yield about 22 cupcakes

Ingredients

For the cupcakes:
½ cup unsweetened Dutch-process cocoa powder
½ cup hot water
2 cups all-purpose flour
¾ tsp. baking soda
¾ tsp. baking powder
¾ tsp. coarse salt
1 cup (2 sticks) unsalted butter
1½ cups sugar
3 large eggs, at room temperature
2½ tsp. vanilla extract
2/3 cup sour cream, at room temperature

For the cherry filling:
16 oz. frozen cherries, thawed*
1/3 cup sugar
3 tbsp. cornstarch
1 tsp. lemon juice
1 tbsp. kirsch (optional)

For the frosting:
1½ cups heavy cream, chilled
6 tbsp. confectioners’ sugar, sifted
1 tsp. vanilla extract

For garnish:
Fresh (or maraschino) cherries, with stems
Chocolate shavings

Directions

  • 01

    To make the cupcakes, preheat the oven to 350˚ F.  Line standard cupcake pans with paper liners.  In a small bowl, whisk together the cocoa powder and hot water until smooth.  In a medium bowl, whisk together the flour, baking soda, baking powder, and salt; set aside.

    In a medium saucepan, combine the butter and the sugar over medium heat.  Heat, stirring occasionally to combine, until the butter is melted.  Remove the mixture from the heat and transfer to the bowl of an electric mixer fitted with a paddle attachment.  Beat on medium-low speed, 4-5 minutes, until the mixture is cooled.  Mix in the eggs, one at a time, scraping down the sides of the bowl as needed and beating well after each addition.  Mix in the vanilla and then the cocoa mixture and beat until incorporated.  With the mixer on low speed add in the dry ingredients in two batches, alternating with the sour cream, beating just until combined.

    Divide the batter between the prepared cupcake liners, filling them about ¾ of the way full.  Bake 18-20 minutes or until a toothpick inserted in the center comes out clean, rotating the pans halfway through baking.  Allow the cupcakes to cool in the pan 5-10 minutes, then transfer to a wire rack to cool completely.

    To make the filling, drain the thawed berries, reserving the juice in a liquid measuring cup.  Add enough water so that the total liquid equals 1¼ cups.  Add the liquid to a medium saucepan with the sugar and cornstarch.  Heat over medium-high heat, whisking occasionally, until the mixture begins to bubble and thicken.  Continue whisking so no lumps form.  Once thickened, remove from the heat and whisk in the lemon juice.  Fold in the drained cherries with a spatula.  Stir in the kirsch, if using.  Cover and chill until ready to use.  (The filling will continue to thicken as it chills.)

    To fill the cupcakes, use the cone method to remove a portion from the center of each cupcake.  Fill each with a spoonful of the cherry filling.

    To make the whipped cream frosting, add the heavy cream to the bowl of a stand mixer fitted with the whisk attachment.  Start beating on medium-low speed, slowly increasing as the cream begins to thicken up to medium-high speed.  While the cream is being whipped, gradually add in the confectioners’ sugar a spoonful at a time.  Whip the cream until stiff peaks form.  (Be careful not to overbeat!)  Fold in the vanilla extract.

    Frost the filled cupcakes with the whipped cream.  (I used a pastry bag fitted with an Ateco #809 tip.) Garnish as desired with cherries and chocolate shavings.  Refrigerate until ready to serve.

    *Note: You can use either tart or sweet cherries for this filling depending on your personal tastes and what is available to you.  Feel free to adjust the sugar as needed to achieve your desired level of sweetness or tartness in the filling.  I used tart cherries and the amount of sugar indicated.

    I’ve made a variation of this cupcake, but I wasn’t fancy and just used cherry pie filling (blasphemy, I know). It actually worked pretty well……. the cupcake had the perfect texture, and it definitely had that cherry taste.

    i have made another version of black forest cupcakes but mine had a cream cheese and used the cherry pie filling. nothing from scratch since that was when i was first learning how to bake from scratch. it used a cake mix batter and then actually the cream cheese mixture and cherry pie filling before i top it off with more cake batter and baking it all. everyone loved it though and people still want more of it to this day.

    Annie – I have never heard of espresso powder before…can you tell me, is it instant coffee, or something else? Can you tell me what section in the market you normally find it?

    Hi Amanda,
    Espresso powder is not the same thing as instant coffee. It is used to make espresso, which is different than coffee. I can’t find it at my normal grocery store and usually buy it at either The Fresh Market or Williams Sonoma. If you can’t get any, try Google for a substitute. It is a nice thing to have around though. It’s used in a lot of chocolate recipes to help intensify the chocolate flavor.

    The cherry filling looks similar to a strawberry filling that I use to make a strawberries & cream cupcake except that my recipe also has cornstarch in it to thicken it. If it needs a little stronger cherry flavor, add some cherry extract. Just a couple ideas. I think I’m going to make these cupcakes for Valentine’s Day. They look absolutely delicious!

    I use a pastry bag to get my frosting to look nice. It makes a huge difference in the presentation of cupcakes. And if you look above, in the earlier comments, I explained exactly which tip I used for this particular cupcake.

    I made these this weekend for my brother’s graduation and what a great recipe! The chocolate cake and whipped cream frosting paired perfectly. I also decided to take your advice and just cut up a few cherries to add to the middle and sprinkle some maraschino juice. The cherry taste was right on.     First of all, thank you for the sweet comment. I love knowing my blog is enjoyed by others and I’m glad I am helping make cooking and baking fun for you guys! As for the dessert recommendation, it’s a tough question because the phrase “too sweet” has no meaning to me :) Also, most of the desserts I can think of that would be tart would involve lemon, which I am not huge on so I don’t have a ton of suggestions. I do have lemon sorbet as well as a blackberry lime sorbet on the blog which are fairly tart (and the tartness is easily adjusted by adding more or less sugar). I also have several different fruit tarts which certainly wouldn’t be considered overly sweet, though I doubt they could be classified as sour or tart either. Sorry I can’t be more help! I’ll keep my eye out for some sour desserts and post any that sound intriguing!

After much deliberation I would have to say that my favorite is the vanilla caramel cupcake. Although the painting is very simple, she captures the elegance of a simple cupcake through the detail in the star-piped frosting. Absolutely amazing. I’m keeping her under my favorites tab.

    English is not my first language so there’s a trick in this recipe i may have not understood… What do you mean by draining the cherries? just letting the water drip in a measuring cup? or smashing them to collect its juice?
    and when you put the cherries in the saucepan, do you take the cherry stones off before or after? (This really sounds like a stupid question but I feel like every detail is important when we cook: results are never the same ^^)

If I had to choose my favorite piece, even though dessert baking is my passion, I would choose the yellow and white teacup. As I was growing up in a very small town in PA, my mother collected fine china teacups that were gifted to her from one of her co-workers who was a world traveller “back in the day.” As a young child, I would fantasize about the teacups and where they came from, and dream of drinking from them one day. Of course, I was never allowed to touch them! As my mother has moved into an assisted living facility, now those teacups are mine and are displayed with pride in my dining room. I have had tea in all of the teacups, each time thinking of how the teacups were wrapped and brought back to PA for my mother to enjoy. That’s what I thought of when I saw that perfect yellow and white teacup! Just gorgeous….

    First of all, WOW! She is amazing! It’s funny, I grew up and live in Wichita, KS and I have family in Bloomington, IN! I go there EVERY SUMMER! I have to come and buy some paintings from her!
