Did you know that July is national ice cream month?  I don’t know where or when these things get decided, but I’m pretty excited about it nonetheless.  Personally my love of ice cream, sorbet and other frozen treats knows no season.  I still make and eat ice cream in the dead of winter.  But if there is a month for celebrating ice cream then let’s celebrate it!  Just as I consider Helen of Tarlette the queen of macarons, I consider David Lebovitz the king (god?) of ice cream, etc.  I own a few ice cream cookbooks but The Perfect Scoop is without a doubt the bible of ice cream.


In honor of national ice cream month, I’ll be posting at least one ice cream-related treat each week.  The recipe for this pistachio gelato doesn’t actually come from The Perfect Scoop but rather from David’s fantastic blog.  Now I normally try to avoid recipes that call for specialty ingredients, but I also know that David only posts reliable recipes that will yield the best end result.  If he thinks pistachio cream is necessary for good homemade pistachio gelato, then I believe him.  You can read about his thoughts on creating this recipe here.  I didn’t really even try finding this locally as it surely would have been a fruitless search.  I ordered mine online.  The only thing to watch out for is that the size of jar I ordered was slightly less than the amount called for in the recipe.  It wasn’t a significant difference so I just made it with what I had and the result was wonderful, but next time I’ll order two jars at least.  Plus then I’ll have some left over for adding to buttercream and other things – this stuff is gooood.  (The differences between ice cream and gelato are best saved for another time and another post, but if you own The Perfect Scoop you can read David’s thoughts on the matter in the introduction.)

And the gelato?  Well, it’s good too.  Actually it’s much better than good.  I loved the thick, smooth texture and the pretty green color.  Even though it may seem to make a small quantity, it actually lasted about five or six nights of dessert in our house because a single scoop is so satisfying.  (I do not seem to have such restraint with coffee or chocolate ice cream.)

    Ingredients

    2 cups whole milk, divided
    2 tbsp. cornstarch
    1/3 cup sugar
    7 oz. pistachio paste (I used closer to 5.5 oz)
    A few drops of lemon juice

    Directions

    • 01

      Combine ¼ cup whole milk with the cornstarch in a small bowl; whisk together to form a slurry so all the cornstarch is dissolved and the mixture is smooth.  Combine the remaining milk with the sugar in a medium saucepan.  Heat over medium-high heat, stirring occasionally, until the mixture is almost to a boil.  Stir in the cornstarch mixture and cook at a gentle simmer for 3 minutes, stirring constantly.  Remove from the heat, transfer to a bowl, cover and refrigerate until completely chilled, preferably overnight.  Once the mixture is thoroughly chilled, whisk in the pistachio paste and a few drops of lemon juice.  Freeze the gelato in an ice cream maker according to the manufacturer’s instructions.  Store in an airtight container in the freezer.

      I have two favorites that come from this fantastic ice cream shop near me called Moomers..they make their own ice cream from their own milk that comes from their cows that live next door! How cool is that! I love their Coffee Toffee and Cherries Moobilee! Yum!!

We have two ice cream makers we have acquired and will be getting all the milk we can possibly muster soon ( a milk cow) so, yeah, ice cream will be frequently made.       I’ve been DYING to get my hands on this book! I found an old but functional ice cream maker in a yard sale last spring for $2 and made quite a bit of ice cream last year. I’ve seen some amazing recipes online taken from this book and I’ve wanted it terribly.

      Plain old chocolate… we would visit my great-aunt in Maine every summer, and several times during the visit we’d go to her favorite ice cream shop. I always got a chocolate waffle cone. The shop closed down about 5 years ago, around the time of my great-aunt’s death. I’ll never forget how creamy, smooth, and rich the ice cream was. Leaving my home in Florida during summer vacation was not high on my list as a kid… but, one mention of the ice cream shop just outside of Bar Harbor would get my heart racing and rearin’ to go!

      My favorite ice cream ever is Blueberry Cheesecake ice cream. Oh my it makes my mouth water to think about it. I craved it throughout my entire first pregnancy, but wasn’t able to find it anywhere. When that child was 18 months old we went to Chicago for the day and I found it at a Baskin Robbins. I was so excited, but unfortunately I had a head cold, and couldn’t taste it at all.       I just made the Strawberry Ice cream from your recipe on here. It was AMAZING! We had really ripe strawberries so the flavor really shines. This is currently my favorite, until I try another homemade flavor I like more. The roasted banana ice cream sounds delicious and I absolutely LOVE banana’s and banana flavor (plus my husband won’t eat any of it so it’ll be all mine!) so that’ll be my 2nd favorite once I make it!

      My favorite ice cream flavors normally have at least some chocolate in them (cookies and cream, rocky road, brownies a la mode). But my absolute favorite ice cream flavor ever only came out for a limited time at Cold Stone. It was called “Blueberry Muffin Batter” and it pains me that they have not come out with it again. It had the perfect blend of blueberry flavor and vanilla and it literally did taste like muffin batter. I used to love it with blueberries and brownies mixed in (still needed my chocolate fix). This summer they are coming out with a blueberry flavor, but it remains to be seen whether it compares to the flavor I fell in love with.

      I think my favorite would have to be chocolate. I like to add milk or soy milk to ice cream until it becomes crystallized rather than creamy. If the milk and the ice cream are both very cold, it takes on more of an Italian ice consistency. I love Italian ice more than ice cream, though. My favorite of that is a fudge brownie flavor, but I can’t seem to get anymore of that. The shop that sold it closed and the owners moved back to New York. I’ll keep looking for some more of that! :)

When I was younger I didn’t care for it but while in Italy I fell in love with strachiatella gelato and I haven’t stopped since. There’s this amazing old ice cream shop (Mashti Malones, in Hollywood on La Brea) and they make the most amazing chocolate chip ice cream that tastes unlike anything I’ve ever tasted.       Just reading all the comments makes me hungry. I think my favorite all time Ice Cream has to be Homemade Mexican Vanilla. Don’t get me wrong I love all different flavors of Ice Cream and I don’t think you could ever go wrong with adding a ton of “loot” to the ice cream but there is truly nothing better than the pure taste of Vanilla. Heaven would be a good description. But the book you suggested looks amazing! Going to have to go and find it!

      Surprisingly, the best flavor I’ve made so far is chocolate, which is funny because I don’t even like chocolate ice cream. But THIS chocolate ice cream was so rich and chocolaty! Dreyer’s take note! I topped it with strawberry sauce for an extra oomph of delicious.

    575. I would have to say Taro! I know…most people won’t know what that is, but it’s basically a sweet purple potato. It’s really popular in Asian desserts (it’s used a lot in the Philipines and Viet Nam).

      It’s amazing! Wonderful flavor…I can’t even describe it. You can find it in specialty stores…but you can also find it in select Albertson’s.

      If you do, Magnolia is a great brand.

      So tasty!

      Having worked at Baskin Robbins in high school and college, I feels as though I could be an expert on flavors. I love the salty sweet combo–especially with vanilla ice cream, pretzels, caramel, and hot fudge swirls. Make it or buy it–it doesn’t matter. But I will take (almost) any flavor, any day–bring it on!! Also, daiquiri ice with a dark chocolate fudge is SOOO good.       I usually consider any kind of sorbet or sherbert or just plain vanilla bean to be my faves, never anything with chocolate. But visiting Puerto Rico a couple of months ago we went to a place called Piu Bello for gelato (my first time ever having it!) and first I tried Choco-Hazelnut and proclaimed that as my absolute new favorite. Then the next time we went back I decided to try another flavor. I picked one called Barioche…dark chocolate gelato, chocolate chunks, whole almonds, whole pecans and I think even some chocolate swirls in it…TO DIE FOR!! So if I had to pick one right now, that would be it.

      Wow, it’s really hard to narrow down to one flavor as my favorite. Homemade vanilla and pretty much any Ben & Jerry’s flavor is up there for me. But if I had to choose it would be Mint Chocolate Chip. I like it from Baskin Robbins, I like it from the grocery, and I like it homemade. I just love, love, love mint and chocolate!

      My favorite would probably have to be a kind called Huckleberry Ice Cream from a small Ice Cream store in my hometown of Hannibal, MO. It’s a blue ice cream with huckleberries in it and it’s soo yummy on a waffle cone!

      My love of ice cream started when I was still in a stroller! My mom took me out for an evening walk and we ended up at Stewarts ice cream shop. Mom got me a single scoop black raspberry in a sugar cone! Yum! I wore most of it, but what made it to my mouth was pure heaven! Still my favorite to this day.

      My most recent favorite flavor of ice cream (because almost any flavor of ice cream is yummy!) is an ice cream called Mousse Trail from Stewart’s Shops (gas station/ice cream shop chain). It’s so incredibly decadent. It tastes like eating the finest mousse with cookie crumbs and chocolate swirls! Heavenly. Also, your post is so timely, I was just looking at Lebowitz’s blog on pistachio gelato (my grandmother’s 81st birthday is in two weeks, and pistachio is her favorite and she rarely gets it homemade). I was debating whether it was worth purchasing the pistachio paste, and now I’m going to! Thanks :)

      After living for a year in Europe, my mom flew over to visit me, and we took a trip to Paris. One evening, we stopped at an ice cream shop near Notre Dame for a late afternoon snack so we split a grapefruit gelato. We sat along the Seine, enjoying our delicious treat and listening to a band play along the river bank. The gelato was so good we skipped dinner all together and went back for a second helping! I don’t know whether it was the picturesque setting, finally seeing my mom, or simply the great flavor (or all three!), but it was hands down the best ice cream I’ve ever had!

      This is easy. A common flavor that doesn’t feel quite so common to me – mint chocolate chip. Green mint chocolate chip. I’m not big on unnatural additives but there is just something about that green ice cream glowing back at me. It takes me back to special days when my parents would surprise my sisters and I with a visit to the ice cream parlor. My mom with my sisters would be sampling up just about every flavor while, while my dad and I – little hand in giant paw – would do one simple walk down that lovely ice cream counter. Then suddenly he’d stop and look down at me – a wink, a cute little smile that only my father could give, and then an order for two cones of the green stuff would be placed. I love that green stuff.

      I NEED this book! I just got my husband the Kitchenaid ice cream maker attachment for Fathers Day (the gift that gives back :) ) and I can’t wait to try out new flavors.

      My favorite flavor is probably Baskin Robbins Triple Play. It was so weird–it has popcorn in it. I worked there for a summer and everyone thought I was crazy for liking it so much. I haven’t seen it since then, but I crave it sometimes.

      I also like cotton candy from a local dairy. Yum!

      My all time favorite was a Häagen-Dazs limited edition – Vanilla Caramel Brownie. Vanilla ice cream with chunks of brownie and swirls of caramel mixed in. I suppose I could accomplish the same thing by baking the brownies, making caramel sauce and self mixing, but just opening the container was so much better. I haven’t had it in 4 years and I still check the Häagen-Dazs section at the grocery store every time :(

      I think it’s a tie–I made David Lebovitz’s Chocolate Peanut Butter Ice Cream and even went to the trouble to make the peanut butter candies that go inside. It was worth every bit of trouble!

      Now that it’s summer–I love getting the Orange and Vanilla cones from Kohr Brothers on the boardwalk at the Jersey Shore. It’s been my favorite since childhood and as an adult, it brings me right back to that!!

They describe the flavor as “Wedding cake flavored”…which I might disagree with (since my fave cake is something lemon or chocolate, but maybe mildly vanilla flavored with a hint of almond flavor. It’s blue of course, and it’s YUMMY (however you describe it!)

      This gelato is amazing. I pop up to King Arthur Flour’s store to take a class once/ year or so and picked up pistachio paste last time because it sounded so appealing. I love pistachio!! I only wish there were more tried and true recipes using the paste. What an amazing flavor. This gelato was our number 1 favorite last year. Incredible taste. KAF sells the paste via the catalogue too, I think, if you don’t live close by. Tomorrow’s gelato in my house will basil. I have an abundance of it in the garden. Hope the flavor is good!
