Oven fries may seem like a simple side dish that just about anyone could whip up with no problem. At least for me, this was not always true. I have made baked oven fries many times in the past and they were always okay, but they weren’t “Oh my gosh, I love love love them” good. A large part of this was due to the fact that they had a mushy texture. If you’re aiming for a half decent substitute for real French fries, chances are you aren’t going for mushy.
I learned the trick of soaking your potato wedges in water before baking the fries and that definitely helped with the texture, but they still weren’t perfect. Well, leave it to the brilliant people of Cook’s Illustrated to perfect the technique because now I have the kind of baked oven fries that I’ve been dying for. These are so great that they have caused me to put burgers on the menu several weeks in a row, just so we could have them again. Of course they can be eaten with more than just burgers though – and they should be!

Homemade pizza…I made a whole wheat dough that makes enough for two pizzas. It waits in the fridge and makes an easy and tasty dinner with some veggies thrown on top.
Every week we have a “veggie plate” which usually consists of some roasted potatoes (or sweet potatoes); salad, and some other green vegetable or squash. We love to eat a veggie plate full of variety. I’ll definitely try the oven fries on a veggie plate soon!

The one dish that is becoming a once a week staple on our menu are your Chicken Gyros, yum!
Sounds pretty strange to some, but we LOVE brussell sprouts. It’s a weekly must have vegetable. I roast them with olive oil, salt and pepper and then sprinkle a good aged balsamic vinegar over them after roasting.
By the way, the fries look great. I’m trying them tonight!
easy! my husband’s caesar salad. he makes the croutons from scratch (as in, even homemade bread), and he coddles the egg for the dressing, which he makes carefully from scratch. we’ve eaten in 3-4 times/week for the last 5 years, and i’m so spoiled i can never order caesar salad in a restaurant – it’s never as good.
I would have to say my pork chops (which are baked in a jalapeno, brown sugar and butter sauce which has lots of “warm” spices such as cinnamon). I learned the recipe from a local restaurant and we love it here – my husband makes it for the firehouse too and the guys go crazy. MMMMmmm – it goes amazing with sweet potatoes.

The fries look awesome; I just tried making oven baked fries last week and couldn’t seem to get them to crisp up. I’ll definitely be trying this method. The meal that seems to end up on my menu every week is enchiladas or tacos. One of those two are always on the weekly menu.

Baked chicken with some sort of starch (maybe those potatoes!) and a veggie and if I’m feeling especially industrious, salad. Comfort food.
A close second is homemade taco salads. I use my own seasoning for either ground beef or ground poultry, but one could use grilled chicken, steak, etc. or soaked and cooked beans, pinto, pink, kidney are good, too. The key here is to use a variety of lettuces, plenty of thinly sliced red cabbage and grated carrots for crunch. I make a homemade dressing with plenty of lime juice, add olives, tomatoes, avocado and cheese, but the topper that makes the whole thing delightful is a hearty sprinkling of sunflower seeds. The flavor combos are delightful.

My weekly dish is probably rice and beans – it is surprisingly delicious, but it is also economical, kid-friendly, very, very fast, and always leaves leftovers for quesaidillas, taco salads, etc;
Pizza—in some form or fashion. Roll up, pizza bites, good ol’ pizza. Some form. We love! :)

I LOVE marinating chicken in freshly squeezed orange juice, topping it with honey and chili pepper, and baking it. It never gets old. Ever! And it’s really difficult to screw up :)
The only thing I want to eat weekly is chocolate cake, but that obviously shouldn’t happen, so I will say roasted vegetables. Doesn’t really matter which ones, I have found that I love them all, especially cauliflower.
We usually have Asian salmon and brown rice. Shockingly my 3 year old loves it so I’ll put it on the menu ALL she wants!!!!

One food my family has at least once a week is pasta. We love any type: spaghetti, linguine, penne, or our home made raviolis or gnocchi. Any type of pasta is great as long as it’s smothered in our families recipe for pasta sauce!

We love making ginger flank steak. The marinade is so easy to make and then we just pop it on the grill. We usually serve it with some sushi rice and a veggie. I use the microplane to grate the ginger and garlic in the marinade, and I think that helps infuse those flavors throughout.
Soup – in the winter months, at least.
Currently it’s the shrimp and grits recipe in the Feb. 2010 issue of Southern Living — we’ve now had it three weeks in a row! Would love to win the cookbook — I’ve been giving it a serious eye for some time now, but just haven’t made the purchase. Thanks for the opportunity!

I usually have too many recipes I want to try to make anything every week, but we do eat spaghetti regualarly. Usually Tuesday or Thursday because I have a late class and always with my own homemade sauce (made from a family recipe!). It’s kind of a simple, cop-out meal, but I love it SO much.

Right now, I’m really enjoying Marlboro Man’s Favorite Sandwich from The Pioneer Woman Cooks – so quick, easy, and tasty. For a girl who doesn’t really care for beef – especially cube steak – these are fantastic! But – lots of butter in the recipes, so I need to take up a sport if I keep these on the menu….

Crockpot Chicken Enchiladas! I’ll make a huge batch of the chicken then shred it and freeze it in smaller parts…great for enchiladas, tortilla soup, tacos, even chicken chili!
Homemade pasta sauce. I cook this in the slow cooker, so it is easy, and I can season it to my liking depending on how it will be served (spaghetti, baked ziti, chicken parmesan, etc).
Any kind of pasta dish, whether with roasted cauliflower and garlic or a veggie meat tomato sauce.

I love tacos enough to eat every week. My husband eats the tacos with a tortilla and I make mine into a taco salad. We use ground turkey, so the salad is pretty low in calories since much of it is lettuce. Add some cheese, sour cream, salsa and I am in Heaven!

Hi Annie! I love your blog! I’ve been following it for a few months now and I’ve found your food such an inspiration to try new recipes. I love making indonesian-style tempeh — and I’m neither indonesian, nor a vegetarian! I just love the heartiness of the flavors — soy sauce, tempeh, diced sweet potato, some coconut milk, and whatever veggies you have on hand, tossed/saute’d together for a delicious, one-pan meal.
Our favorite weekly meal is definitely pizza, especially homemade. And we love to mix it up every week by trying different pizza recipes (I really loved your deep dish style you posted awhile ago!).

Stuffed peppers – I make a stuffing with ground trukey, brown rice, tomatoes, some other chopped veggies I have on hand, peas, cheese, and spices, and they are soo good!

I LOVE quesadillas…they’re so easy and if you make them at home they can be super low calorie…I use grilled fajita-seasoned chicken, spinach, tomato, and Weight Watchers low-fat mexican style cheese. Awesome!

I am currently trying to lose weight so I try to cook as light as possible. I have a couple of Weight Watcher’s recipes that I absolutely love. The one that I would make room for every week would be Lemony Garlic Baked Shrimp. It is delicious! I pair it with whole wheat pasta…yum!

We probably eat baked potatoes with broccoli (fresh NOT frozen) once a week all ready. Everyone will actually eat it, which is a big deal since I have 3 kids and one is incredibly picky.

My boyfriend and I LOVE your calzone recipe (the one with sausage, ricotta, and spinach)…we make our own dough from scratch and follow your recipe for the filling, but sometimes throw in extra ingredients… The calzones always come out HUGE, which is great – leftovers for lunch the next day!

Oh my goodness I would love that book! Growing up we always had a pot roast and mashed potatoes every Sunday that I never tired of. I don’t always do that every week for my family now, but another meal we really like and have often is Honey Lime Enchiladas. So flavorful and tasty. Green Chili Chicken Burritos, or any Mexican dish really.
Our favorite dinner that is on a weekly rotation is Easy cheesy chicken. (made in the crockpot) served with either mashed potatoes, rice or noodles and broccoli because the chicken makes a cheese sauce and it is great to dip the broccoli in. Yumm!
We have simple sauted chicken breasts with a pan sauce (which varies depending on my mood) every week. It is super simple, yet the pan sauce gives it depth. Perfect for a busy night with children!

I know it is boring, but Broccoli. I could eat it every day of the week and not get sick of it. Plus, since I don’t do well with dairy, it provides me with the calcium that I often miss out on.
I often sautee bell pepper, onions and garlic with hot Italian sausage. Served with whole wheat pasta, this is a staple in my home! In the Summer, we eat it every week, and in the Winter at least twice a month!

It may not be a meal, but we definitely eat guacamole once a week. Whether its with taco salad, fajitas, quesadillas, enchiladas or just a snack with chips, it’s a regular feature at our house. And ONLY homemade. The stuff they sell in stores is green but the similarity to actual guacamole ends there.
Sweet Potato Fries with garlic and lemon Aioli.. the sweetness of the sweet potato fries and the tangy garlicy dipping sauce is the most perfect side to ANY meal (in my humble opinion anyway…. )
I have this amazing recipe for a Pot Roast with Mushroom Gravy, which everyone in my family loves. If it wasn’t so expensive to make we would have it at least once a week.
We have Taco Tuesdays here – it is an easy meal that everyone likes. We also have pizza on Fridays from homemade pizza dough and we make our own sauce in the summer when the garden is full of tomatoes.

I would probably say pizza just because it is so versatile, but a close second would be your Herbed Chicken with Creamy Orzo. I make it with fettuccini, but it is amazing!
Turkey Taco Tuesdays!!! :) We LOVE Mexican food and I usually whip up some homemade salsa and guacamole to go with it!
I love making this smoked sausage soup that I found in a cooking light crockpot cookbook. It is sooo good and healthy, especially on a cold day.
There is nothing like grilled cheese and tomato soup for those nights when I don’t feel like cooking anything major yet want some comfort.
I have my Italian grandmother to thank for this – I definitely could have homemade pasta and meatballs every week… maybe even twice! :)

Lately homemade pizza has been on the routine. Even when I don’t plan on having it I always end up changing my mind and making it. In the summer I love to have grilled pizza but really I just love pizza and with homemade sauce and fresh toppings you really can’t go wrong.
The easiest, chicken and cheesy rice, off the back of a cambells can. its a go to and has so many different add ins.

I love to make pasta with shrimp, lemon, garlic and parsley. We have this pasta at least 3 times a month mostly because it is so quick but also because it tastes soooo good! I made it last night and when my husband came in the kitchen and saw the small piles of lemon zest and parsley he said, “I know what we’re having for dinner!”
I could definitely eat pizza once a week (maybe more!), but for the sake of my waistline, I try not to!
Quiche – or “egg pie” as my 5-year old calls it. It’s simple, delicious and the combinations are endless!

We always end up having some kind of burrito…based on whatever veggies we have left in the fridge, whatever kind of meat we have hanging around. Usually by Thursday or Friday we’re putting random things into a tortilla :o)

May be a weird one but I just love real steak sandwiches :) Not the cheap steak um type but real thin sliced steak with sauteed mushrooms, onions and melted cheese on top of the very best roll you can find.

Taco Soup!
I try to change things up fairly often, but we have a “greatest hits” night, which generally includes Cooking Light’s roasted tomatoes and stovetop mac-n-cheese, turkey cilantro burgers with a chipotle ketchup, veracruz-style red snapper (usually it’s tilapia), lemon peppercorn tilapia, or some kind of Asian stir fry.
We have breakfast-for-dinner every Monday night! It has become such a tradition that the kids might revolt if I gave it up!
Scrambled eggs, toast and fruit. I know it’s kind of a cop-out dinner but it’s what usually I’m craving once or twice a week. And with fresh eggs from my uncle’s farm, it’s even better!
For a while I was cooking this amazing sourdough bread and eggplant lasagna almost weekly, but it’s time consuming so I haven’t made it in a while. Might have to add it back into the rotation – after I make these fries!

We have some kind of a Chinese/Asian stir-fry at least once a week. The ingredients change, but the basic flavor remains the same.

Every Friday is homemade pizza night in our house. I make a big batch of pizza dough and freeze it into portions and the every Friday I defrost one and we can all top it as we choose. So tasty!!

This is easy – Ina Garten’s Parmesan Chicken. The hot chicken, cold salad, and lemon vinaigrette….I’m salivating just thinking about it! I bought some very expensive breading trays from Williams Sonoma just to make this recipe.
In the summer…grilled chicken, corn on the cob and oven fries/oven sweet potatoes ooh and fresh sliced tomatoes and cucumbers from the garden! In the winter I try to make soup once a week because it’s great comfort food!
Homemade pizza (with your delicious sauce!) usually graces our table weekly. We also have a soup night every week….the soup recipes rotate, but we are soup lovers so we’ve made it a weekly affair.
This winter we’ve eaten copious amounts of Smitten Kitchen’s mushroom bourguignon. It’s so good on a rainy Seattle day.

Right now I’m obsessed with sweet potatoes. I could eat those weekly. Other than that it changes right now since I’m pregnant. Something sounds good one minute then gross the next lol.
I would have to say my “famous” (at least in my own family) pork roast. I created a recipe that includes rubbing the roast with fresh garlic & olive oil & seasoning with sage. Roasted in apple juice, which results in an awesome gravy! I usually serve with oven roasted potatoes & various veggies. Also homemade applesauce & homemade rolls which I throw in some garlic & sage in the dough!

We love “roasted” chicken in the crockpot and served with roasted brussels sprouts. We have this pretty much weekly. It is such and easy and healthy dinner. It also allows for leftovers and I use the chicken for a different dish the next day and save the au jus for soups.

Since I’m in dental school and don’t have a lot of time most days, chicken tacos in the crock pot are soo delicious and easy and make the house smell wonderful!

canned jalapeno juice and however many chopped jalapenos you desire
approx. half a packet of taco seasoning
water until all the chicken is covered and wet

I make a sweet and spicy chicken that my hubby and I love. You combine olive oil, white vinegar, honey, soy sauce, paprika, cayenne pepper, regular pepper, and thyme (I think that’s the whole list) in a baking dish then add four chicken breasts and bake it for 30 minutes. It’s tender and delicious and it smells fantastic! And I love that other than my measuring spoons, I only dirty one thing. Can’t beat that with a stick!
We make some type of Mexican dish weekly. Whether it is fajitas, original mexican tacos, taco salad, or your black bean enchiladas (which are fabulous by the way! My husband thoughtit was ground beef!) With a side of homemade salsa and gucamole! YUM!

As much as I love cooking and baking all sorts of dishes, the meal I would choose would simply be 2 slices of bacon, an egg (over easy), 2 Belgium waffles with butter and syrup, a banana, and a cold glass of milk [I would include hash browns but I tend to botch it up :( ]. Nothing beats breakfast in my book and even had home cooked breakfast party for my birthday instead of eating out, saved money and it was still oh so delicious.
My husband insists on having pasta with stewed tomatoes at least once every week. The ingredients list is incredibly simple and is always accessible in our cupboards (http://bit.ly/8BCrqC). The one item that is on our weekly menu are grilled cheese sandwiches. It sounds really basic, but I like to use premium cheeses (fontina or Gruyere) with sourdough bread or do a variation of a “melt” (patty or tuna). About the potatoes… It seems like an awful lot of oil for ‘baked’ fries. It seems like they are frying, just not deep-fat fried. I wonder how much oil french fries actually soak up when deep-fat fried. Would it be more, less or just about 1/4 Cup + a Tablespoon that this recipe is calling for? Especially over only three potatoes.

Annie, thank you thank you THANK YOU! My husband is becoming more and more frustrated with the frozen variety of French fries, since they NEVER get crispy. I’ve always had the same problem when I make them homemade, too — mushy and not crispy enough. We’re having burgers next week and I am definitely trying these!
I try new recipes so frequently that there are very few that make it onto my menu week after week, but one thing I DO make all the time is Tuscan grilled chicken sandwiches. They’re topped with artichokes, sliced roma tomatoes, fresh mozzarella, and pesto mayonnaise, and they are delicious! We love them.

Not all of the oil is absorbed into these fries either. The majority of it stays on the pan and keeps them from sticking. Sure, I wouldn’t call them health food, but they are most definitely healthier than something fried in a pot of oil.
Well….I can’t say that I cook anything every week…I am always changing it up…but I would say that when in a rush….BBQ chicken Sammies…that I make in the Deep Covered Baker in the microwave in under 15 minutes…are a hit all the time!!!!

My husband and I love lemon chicken. It’s just a marinated chicken cooked on the stove-top, but it never fails to be delicious, and healthy. We love to have it with rice. It’s so tasty that I serve it in the pan so we can dip the chicken in the remaining juices. Scrumptious.

So delicious – so satisfying…We have Steak Sandwich from Ina Garten every week. It might be for lunch on the weekend, or an open-faced version on a week night, but my family just LOVES it. It’s up to me to modify it to keep it from getting boring.

I must say I’m a big fan of soups. I only cook for one so I always have leftovers. My favorite soup right now is tomato bisque soup. So yummy!!! Its an easy meal when I come home late from work and don’t want to do anything fancy. I warm up some soup in the microwave and make myself some grill cheese ( I always have cheese in my house! Its a must!)

My secondary answer would have to be my mom’s chicken a la’ king recipe from the old Betty Crocker cookbook (probably about 30-40 years old). It was comfort food for me, so I was super excited to cook it for my kids, and they love it as much as I did! The smell of the butter and the mushrooms and the bell pepper starts it off and the whole house gets excited, knowing what’s for dinner!
Chili and some sort of stir fry usually make it onto our table once a week! =)
Tuna Fish Salad. I’ll explain. I’m in college and it’s not expensive to make, and relatively quick to put together. But the main reason- I love it! My mom used to make tuna fish salad every Friday (catholics), and I got used to eating it. I like to put olive oil, lemon, dijon mustard with oregano and that’s about it sometimes!
I make a mean salad, but I would have to say that Ellie Krieger’s Stuffed Turkey Burgers make our menu every week. They are healthier than the normal burger, super easy, and oh-so-tasty.
Ratatouille – it’s great all year round. Served warm in the winter with parmensan cheese accompanied by warm, crusty bread or during warmer months at served at room temperature. It’s great because you can make it in the slow cooker and have an all veggie meal or serve as a side dish with grilled fish/chicken. Love your blog!!!
Well, it’s not exactly the same food every week – but currently, I’d have to go with soup – mostly variations on black bean soup, with bread on the side. Simple, but with a little kick!

Hi Annie! This is also my favorite recipe for oven fries. I had been making oven fries for a long time and I received this recipe in a Cooks Illustrated magazine and was so impressed with the article that described all the experiments the woman did to come up with this recipe. I have been making them like this ever since. They are perfectly fluffy/airy on the inside and crispy on the outside. Yours look amazing!

I have penne or rigatoni pasta in some variety or other (never red sauce) just about every week… and sometimes twice a week. There’s something about the size, shape, texture and ridged goodness that I can’t get enough of — with olive oil, parmesan, vegetables and Italian sausage… yum.

At least one day a week I always make Chicken and homemade noodles. My husband is from PA and we are currently living in GA. He grew up eating that meal which his grandmother made and I have to say I ate her version and it is FANTASTIC! He gets very home sick, so I wanted to do something for him. So, I practiced cooking that for a year until I was able to get it done to his liking, which is just like his grandmothers and we absolutely LOVE IT. And I must say, I enjoy making homemade noodles, I’ll never go back to packaged egg noodles again.
Our go-to weekly meal in the winter is grilled cheese and soup!

I find that I am always making cheese sauces! My friends and family love the sauce on vegetables, meats, pasta, and as a dip for bread! I love how easy they are to make, and since the base is so simple, you can really add any type of cheese/seasoning to change the taste so that it fits with whatever the main dish is.
when I say white girl ‘above’, I mean, I have yet to make them ‘authentic’ enough.. trying to perfect that :)

Julia Child’s crepe recipe… it is the best one I have tried so far and I make them on a weekly basis… there is nothing more satisfying then a warm, sugary crepe.

I don’t have anything that I fix weekly as I wind up eating leftovers five days out of the week as is! But I do tend to fix some type of bean dish each week–navy beans and bacon soup, black bean with peach salsa soup, Tuscan style shrimp with white beans, chick pea salad, etc.
I love the American Test Kitchen cookbooks as much for their techniques as for their recipes. I’ve learned so much from the one I do have.
It has to be roasted cornish hens and potatoes flavored w/garlic , oregano, thyme and lemon juice.

My husband makes these fantastic little Mexican pizzas — just ground turkey cooked with tomatoes and spices, then piled on top of flour tortillas, sprinkled with cheese, and baked until crispy. We love this meal — I get really excited when he says he’s going to make it!
My daughters favorite dinner is english muffin pizzas and salad, so as long as she’ll willingly eat it, it’s on the menu!

We have burritos at least once per week, because you can change up the ingredients based on the season! Plus they are easy to make and everyone can customize their burrito. My personal favorite is our breakfast burrito with a side of fruit. :)

We love broccoli chicken divan from the back of the Campbell’s cream of broccoli soup can. We serve it with white rice and salad on the side. It’s sooo good, and the leftovers are twice as nice the next day. Plus, it literally takes 5 minutes to throw together and then you just have to bake it.
a dish that is always on my weekly menu is an over easy egg on seasoned rice with steamed broccoli and occassionally a store bought eggroll. i know it sounds ridiculous, but it is sooo good! i find myself craving it if i go too long without it. the well seasoned rice is the key, i use lemon pepper, garlic powder and instead of water i use vegetable stock (chicken stock would probably be even better though!). it’s so good! when you break the yolk of the egg it makes a sauce for the broccoli and rice and it is to. die. for.
I think it would have to be spaghetti. We LOVE it along with some yummy garlic bread.

I love Chipotle Mexican restaurant, and I have figured out how to make my own “Chipotle Chicken Burrito” that sends me running to my kitchen instead of for a $6 burrito–love, love, love them! Cilantro-lime rice and cool guacamole! Yum! Fortunately, when I make this meal, I make enough for several meals because it is yummy even left over!
I don’t think I have one recipe I can make every week, especially for dinner. We do have some pasta dish once a week and I have few I shuffle between. For lunch I can eat a good turkey avocado sandwich every day!
I have a fabulous recipe of a meat ragu sauce (best i’ve tasted yet!) that we have on pasta atleast once a week. Its ground turkey and mushrooms and carrots… I could go on forever about it :) We do oven fries or crash potatoes atleast 2ice a week too.
In winter I’d say potato soup. My husband loves it and it’s so easy.
Sausage Pasta. Very easy and fast and very tasty.
I love pho! The place I get it from is closer to work than to home, so I only get to eat it for lunch (unless I go a little out of my way & pick it up on the way home). But this means hot, yummy goodness for lunch for 2 lunches in a row since it’s too much for one sitting.

Peanutty Sweet Potatoe Stew
Ingredients:
1 tsp olive oil
1 medium onion, diced
2 garlic gloves, minced
1 red pepper, chopped
1/2 tblsp brown sugar
1/2 tsp cumin
1/2 tsp cinnamon
1/4 tsp cayenne pepper
1/3 cup smooth or crunchy peanut butter
2 small sweet potatoes
2 cups vegetable stock
1/2 can red kidney beans (You can also use chick peas)
2 tomatoes, diced
1 tsp salt
1 tsp pepper
1) Saute the onions and garlic in oil for 5 minutes.
2) Add all powdered ingredients and stir for 30 seconds. Add the remaining ingredients and simmer for about 30 minutes. Garnish with peanuts and cilantro, if desired. Enjoy!

One thing on the menu every week is baked chicken with brocolli cheese rice with a vegetable. I think I will try these fries tonight mine always come out mushy.
Soup!! My husband is so sick of it, but I live in UT, so you just need it in the winter.

Portabello mushroom sandwiches. I marinate them in balsamic vinegar and season with salt and pepper. Grill the mushrooms and when done top with a slice of swiss cheese. Serve on toasted bun with garlic mayo made from mayo, lemon juice, and garlic. Also put roasted red peppers on bun. Yum.
tequila fajitas if I start doing them weekly though I do leave out the tequila or it can get pretty expensive.

In our home, a deconstructed spicy tuna roll salad (say that five-times fast!) is on our menu each week. My husband and I are polar-opposites in the kitchen; I follow recipes exactly as they are written, and he’s far more loose and intuitive. We created this recipe together- it’s not only delicious, but fun to make and reflective of both our cooking personalities.
These look delicious, anything potatoes is my favorite. That’s probably why my favorite dish is gnocci – I could eat it every day!

I love to make a veggie scramble for breakfast on Sat. morning for me and my boyfriend. We make it together by chopping up all sorts of veggies like mushrooms, tomatoes, green peppers, zucchini and add them to 4 or 5 eggs in a pan with monterey jack cheese, and some rosemary. Yum!
Oh my goodness… It’s not really a meal, but homemade bread. The time each weekend is totally worth it!

chicken burritos!!!
I do steak rollups. I put a dressing of mayo and horseradish spread lightly over the tortilla. The roll it up with thinly sliced steak, salad greens, tomatoes, feta cheese. Maybe a little vinegarette if you are into that. It’s easy, nothing incredibly creative but my husband loves it. Plus I love having tortillas in the house for quesadillas, homemade chips, tacos etc. I have two little boys (one of my boys is also named Andrew!) so I need easy, quick dishes! I love your blog!!

Chicken Noodle Casserole!!!
I buy 1 pound of dried pinto beans and we soak them overnight and make AWESOME pinto beans (my personal recipe — which I would love to share)for burritos. We freeze them if we have extra but most of the time we will plow through them in 7 days! My kids love them as a side dish with cheddar or cotija cheese. So good!
During the summer, we grill fajitas about once a week. They are so yummy!
My own homemade guacamole. I could never get tired of the fresh, bright flavor. I think I could eat it every night!

As boring as this may sound, I crave a huge salad at least once a week. I usually fill a huge bowl with spinach, mushrooms, carrots, any other vegetable i have in the fridge, chickpeas, dried cherries, almonds, and balsamic vinaigrette.

I love oven baked fries and like you, hadn’t found just the right process. These sound and LOOK amazing! I can’t wait to try them. As for my faves in heavy rotation, I love a good green salad and serve it as our vegetable at least 3x week. Red/green leaf lettuce, thinly sliced sweet onion, a handful of craisins, drizzled with extra virgin olive oil and red wine vinegar. I also daydream (no, literally, daydream) about garlic-sauteed spinach. Either of those with a good steak and I can die happy.
It depends on the season. Pork chops with maple-mustard sauce, roasted root vegetables, and isreali couscous make up a popular dinner in my kitchen this winter. Thanks for the offer.

We eat tacos every Tuesday! I must confess I use the vegetarain Boca Meatless Crumbles instead of ground beef. My hubby and kids get so excited when it’s Taco Night! They know it’s a soy sub, but they love how the tacos taste! The boys eat soft tacos with cheese only. My hubby eats crunchy tacos with cheese, lettuce, and Taco Bell Sauce. I eat a taco salad — crumbled crunchy taco shells, tons of lettuce, spicy fresh salsa, a smackeral of cheese and Ortega Taco Sauce (all for about 5 Weight Watcher points!). We love us some tacos!

Hmm, I can always go for tacos or pizza. Tacos have to be homemade & pizza can be either homemade or bought. I do love experimenting with different toppings & sauces :)

The one recipe that makes it on our menu weekly is arroz-con-pollo. I learned this recipe after spending wonderful quality time with my mother-in-law who learned how to make this authentic recipe while living in Ecuador. Its a great during-the-week recipe as most of the ingredients can be ready in advance (boil and cut the chicken, cook and refridge the rice, chop the veggies). Then when you are ready – stir fry! It makes our house more like home every time!

Either my Lemon Risotto or my Beet & Cheddar Risotto … lots of cheesy carby goodness! Yup, can have either one of those every single week.

We’d love to put Homemade Mac n Cheese – Pioneer Woman’s recipe on the weekly list; but for the sake of our waistline I only make it twice a month…
We have some kind of pasta every week, with my homemade spaghetti sauce, sometimes with sausage or meatballs, sometimes stuffed shells.
Pasta – sometimes with sauteed shrimp, sometimes with meatballs, often with some kind of chicken, or with salmon and homemade pesto (frozen in ice cube trays). Always part of a quick and easy dish!

Crock pot Turkey taco chili. I like to make batches of it and freeze as it’s a quick meal served with tortillas.
Our whole family really enjoys the baked garlic rice pilaf of yours and could eat it frequently!
We love parmesan-breaded pork chops. So easy but very tasty. I think it’s originally a Giada recipe.

I use Greek seasoning from Penzeys daily- whether whisked with olive oil and red wine vinegar for a dressing, mixed with olive oil and parmesan cheese for dipping French bread, adding to grains and veggies, or sprinkling on chicken or fish! It’s amazing!
Kielbasa! With buttered noodles, with potatoes, with fries, with anything!
Home made garlic bread sticks. My 16 yr. old son had a friend over after skiing the other day. Just as they walked in the door the bread sticks came out of the oven. The kids ate the whole batch and my son’s friend asked me if he could have the recipe! It’s the most requested food item in this house.
Makes excellent pizza dough as well.
A shrimp stir-fry!
I would say, even though I have never posted about it, that some kind of Indian spicy Tofu stirfry is put on the table at least once a week, if not more. Pulse fresh corriander, garlic, shallot, chili peppers and simmer for about 10 min in a a couple tbls olive oil. Then add your tofu and veggies…wha-la..healthy yum!
Anything mexican! I LOVE mexican food….usually we have tacos about once a week…or burrito casserole…

Vietnamese Carmel Prawns would be on the menu every week. My kids love, love, love prawns, and this is a sweet,spicy quick stir fry. These Oven Fries would be a great change from our usual jasmine rice- what kid doesn’t love fries? Thanks for the recipe!
I make orzo with sauteed spinach, feta, sundried tomatoes and roasted shrimp all the time. It’s easy to whip up at a moment’s notice and I add whatever veggies I have on hand to beef up the health factor. So simple and delicious.
I have to say, even though it takes a few hours, I make lasagna almost every Sunday. My recipe is so amazing, I just can’t pass it up! (It doesn’t help that I think my fiancee fell in love with my lasagna before he fell in love with me!)

Colcannon! I’m not Irish, but I love this traditional Irish dish. Born and raised in Idaho, this dish completely appeals to this potato-loving gal’s heart. Potatos, cabbage (or kale) and bits of salty ham or bacon, oh and don’t forget the butter! Heaven on a plate. If my hips and rear-end would let me, I have this meal two or three times a week!

Pizza…almost every Friday night is pizza night. I make the pizza dough into small individual pizzas then everyone chooses their own toppings. My favorite is a white pizza with roasted veggies. So glad it’s Friday…pizza is in my future!!!

I love making your chicken enchiladas. I thought they would be too spicy w/ 2 jalapenos (yes I am a bit of a woose obviously) but they are just fantastic. Honestly though I would do those bi-weekly w/ the chicken parmesian, or the eggplant parmesian on the weekend, or even with the baked ziti. Do you see a pattern here? You should I love your recipes! I have a “cheesy orzo” recipe that I make that my husband regularly requests. It is like a refined, mellow Mac & Cheese (made with parmesan, shallots, and fresh herbs). Neither of us would complain if we ate it weekly. :)

well, i have to make chicken cordon bleu for my husband every week…i personally like to eat a quesidilla at least once a week…just love mexican food!

I love chicken and rice. It’s baked chicken pulled off the bone. Combinbed with sauteed onions and garlic, with sour cream. So simple and served over rice. YUM!
Pizza. My husband discovered he could make his own and that was it. We now have it almost every week, but I don’t complain too much because it means one night I don’t have to worry about getting dinner on the table!

Buttermilk Waffles on Sat mornings
I had been looking for a recipe that were like a Mother’s Day brunch we used to go to. I’ve tested different recipes until I ran across a Cook’s Illustrated version. Bingo! That was it. My favorite way would be with slightly sweetened whipped cream with almond extract and sliced fresh strawberries. Or that same whipped cream with homemade blueberry pie filling. Ok, at that point its more a dessert. :)
I’d make a double recipe and freeze the leftovers for the rest of the week. Then toast them up like Eggo waffles. AWESOME!
Balsamic Chicken and mashed potatoes. YUM!!! It’s always a hit and my hubby asks for it regularly. When I try to switch things up a bit, he is disappointed. So it’s a winner!

Fish tacos! I love them so much I could eat them every single day (and usually have them at least once a week).
I mill my own wheat with a flour mill, so I use fresh whole wheat flour in my cooking quite frequently. One of my favorite recipes is my own for whole wheat chocolate chip pancakes. I use the freshly milled whole wheat flour, but I also add navy beans to the mill to make bean flour. The beans combined with the wheat makes a complete protein which makes me happy. The kids can’t taste the navy beans at all!!! I make the pancakes for breakfast at least twice a week and for dinner on busy soccer nights about once a week!!
My husband’s favorite is Chicken Broccoli Casserole and would LOVE it if I made it once a week. It’s delicious and has a hint of curry in it. Mmm. Mine is probably Sweet and Sour Meatballs, but since hubby isn’t as big of a fan, it doesn’t get made nearly as often as I would like. *sad* :)
Cinnamon toast! It’s one of those ultimate comfort foods that I’ve loved since childhood, and I find myself making it at least two mornings a week for breakfast.
Cheesy Chicken, the title doesn’t do the dish justice. It of course has chicken and cheese (Velveeta, creamy goodness) but also has a bit of zip (by adding Rotel diced tomatoes and chiles). It also has a can of cream of mushroom soup and corn for a Southwestern kick. Delicious. You serve it over noodles and with a slice of garlic toast. My absolute favorite food and an easy go-to meal!
Homemade nachos. I grill chicken that has been marinated in salsa and put it on a bed of homemade corn tortilla chips & topped with cheese. Seriously, I could make this for dinner every day and the hubs would be happy. :)
Risotto! I love the texture and there are an unlimted number of flavor combinations. Too bad my husband doesn’t feel the same way!
Homemade Marinara and pasta! No one in my house seems to ever get tired of this meal.
Roasted veg of any kind. I have it almost every other day.
Pizza…at home! Preferably with mushrooms and fresh baby spinach.
I like to marinate a flank steak all day, then throw it on the grill for about 5 minutes each side. We have it thinly sliced with either mashed or baked potatoes and then the next day I have it sliced on top of a fresh green salad.
Black Bean Tortilla Casserole. It’s so easy to make, cheesy, but also healthy.
Curry chicken with jasmine rice. Minimal effort and delicious!
Homemade pizza! We could eat this several times a week but then I would need to work out more.

We have spaghetti and meatballs every week! It used to be Wednesday night, and now it has been moved to Monday night. DD has dance class in the evening, so it is a quick and easy meal that everyone likes!
I make a sweet sausage minestrone with totelleni, and artichoke that I could eat every week (well alone with warm bread). Using turkey sausage I feel it’s fairly healthy and tastes wonderful!

It’s a Campbells soup recipe that is a chicken stir fry w/ Cream of Shroom soup. Soy sauce, carrots, broccoli..mmmmm, comfort food!
Burritos! I’m just addicted to them, I will consume one (either purchased or made) about once a week.
We have quesadillas ALOT around here! I like to experiment with different fillings. It’s also quick and easy.
Does a peanut butter sandwich count?
If not, I’d have to say chicken and rice soup and cornbread.
The only food that we have regularly year-round is picnic potatoes. We just can’t get enough of them! We also have chicken parmesan or pizza quite a bit.
This might be cheating, but stir-fry! It comes together really quickly, and you can mix it up easily, with different veggies and meats. Really the only constants for me are marinating the meat in a blend of Italian dressing soy sauce. Really not traditional or authentic, but so good!

It fluctuates at our house but right now we’re addicted to this chicken and rice casserole from Cooking Light. Its a great lightened version of a classic comfort food and we can eat it guilt free! Its delicious. You can find it on the website.
Warm coconut chicken tortilla soup. Throw it all in the crockpot in the morning and tantalizing deliciousness tickles your nose as your come through the door in the evening. Mm-mm! I am also a firm believer of cornbread with any Mexican meal so when I feel ambitious I make Boston Market (aka half butter cake mix) cornbread. Yum!

Ratatouille…especially when the herbs and vegetables are coming fresh from my garden! But for hubby it would be Spanish Rice. And the kids would go with French Toast Strata with homemade Apple Cider Syrup. Yummm! We save that one for holidays and birthdays!

I think tacos would have to be my answer. We just finished a dinner of beef tacos, your salsa, and my new margarita madeleines, and it was fantastic. We love Mexican food.
In the summer it’s burgers! My husband loves to grill so we probably have some kind of burger at least once a week. I”ll have to try these fries to go with them!
We love spagetti pie that it finds it’s way to our table at least once a week. It’s a dish I learned to make early on in our married life. I couldn’t compete with my husband’s Italian Nanna’s spagetti and meatballs so I made something she didn’t make. The family loved it! It’s become a signature dish at my table.

Recently, my husband’s grandmother taught me how to make her chicken and dumplings. She didn’t have a recipe, so I had to take notes and then go home a figure out the measurements. I did make a few tweaks of my own, but they are so good and so comforting. It makes enough for leftovers, so we have had chicken and dumplings the last two weeks and I think I’m going to put it back on the menu again this week!
Baked tilapia. I love your website and my daughters are now fans too. My daughter living in chicago recently made your deep dish pizza with her boyfriend and now say they are spoiled and don’t think they will be able to go back to take out again. (they made it with lowfat turkey pepperoni!) Your gyro meals were amazing and every night since I have made a greek salad with your yummy dressing. This is actually a dish but we always have a “freezer” meal. On Sunday when I am making dinner I make one “freezer” meal. It is usually enchilada’s, lasagna, chicken cordon bleu, pizza or chicken kiev. My hubby is going back to school and working full time so dinners have been tough lately. It is nice to have these quick meals on hand.

One of my favorite dishes is a recipe I found on eatingwell.com. I don’t know exactly what it’s called, so I copied the recipe:
2 5-ounce boneless, skinless chicken breasts
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1 tablespoon canola oil
1 medium shallot, minced
1 cup thinly sliced shiitake mushroom caps
2 tablespoons dry vermouth, or dry white wine
1/4 cup reduced-sodium chicken broth
2 tablespoons heavy cream
2 tablespoons minced fresh chives, or scallion greens
PREPARATION
Season chicken with pepper and salt on both sides.
Heat oil in a medium skillet over medium heat. Add the chicken and cook, turning once or twice and adjusting the heat to prevent burning, until brown and an instant-read thermometer inserted into the thickest part registers 165°F, 12 to 16 minutes. Transfer to a plate and tent with foil to keep warm.
Add shallot to the pan and cook, stirring, until fragrant, about 30 seconds. Add mushrooms; cook, stirring occasionally, until tender, about 2 minutes. Pour in vermouth (or wine); simmer until almost evaporated, scraping up any browned bits, about 1 minute. Pour in broth and cook until reduced by half, 1 to 2 minutes. Stir in cream and chives (or scallions); return to a simmer. Return the chicken to the pan, turn to coat with sauce and cook until heated through, about 1 minute.
It’s so good! I make it with your garlic rice and it is absolutely amazing!
Hmm, this is hard. I love a lot of foods but almost never repeat something each week. I’d say Tacos and Taco Salads are high on my list of favorites.

Mock garlic mashed potatoes
We used to love a nice, thick pizza. After travelling to Italy, however, we have fallen in love with Pizza Margherita and end up making it almost every week. Fresh Basil, Fresh Mozarella, and tomatoes with garlic, olive oil, and coarse salt on a thin crust. Mmmmm.
Chicken Pasta! Bowtie pasta with chicken, garlic, fresh basil, fresh lemon juice, olive oil, red pepper flakes and Parmesan cheese!

My most favorite (and super simple) recipes to make every week is a pork tenderloin cooked in the crock pot with a can of tropical friut salad dumped over the top, 1/2 C. of OJ and a splash of water. Cook on low for 8 hours and WOW! I serve it with wild rice and brussel sprouts. It’s one of my husband’s favorites, too.

One of my favorite meals of the week is mashed potatoes! I love boiling them in chicken broth for flavor and I add sour cream when I’m whipping them for flavor and it seems to make them a little more creamy.
