This weekend I had a bowl of cereal for breakfast but just a few hours later, I was hungry again.  I decided to whip up a batch of these muffins.  I had some very ripe bananas months ago about to go bad, so I mashed them up and froze them in a plastic bag.  I was very happy to have them on hand so I was able to make these on the spur of the moment.  These have a really wonderful banana flavor.  I have made them many times and they always turn out well – that’s the kind of recipe I love :)

Banana Crumb Muffins
For the muffins:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
½ teaspoon cinnamon
1/3 cup butter, melted 

For the topping:
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter   

Preheat oven to 375°.  Lightly grease 10 muffin cups, or line with muffin papers.  

In a large bowl, mix together 1 ½ cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg, cinnamon and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.  

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.   

Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

    I must say it’s been a bit since I made these muffins (we loved them the first time around), because I usually make my famous banana bread. I took a vote this morning to make these or banana bars (for a nice change) and these won. I made them this evening and I think they are a new favorite, hubby says he likes them MORE than my banana bread. I must say, they rock and they are SOOOOO yummy warm!!

    I made these muffins and totally loved the recipe. I’ve since made them again, without the crumb this time and instead, I incorporated 100 grams of Lindt Swiss dark chocolate (chopped). Incredible muffin. Now, I make sure there are always banana in the freezer so I can make these at a moment’s notice. I love your blog!

  • Do you think it would be ok to refrigerate these overnight before adding the crumb topping–that way I could cook them early in the morning? They got really soggy really quick and tasted much better fresh out of the oven.

    This recipe has been in my stack of must try recipes for quite some time now. I found myself with 6 over ripe bananas last night and decided the time was right! I made a double batch and sent half with my husband to his job site and brought the other half to work with me this morning. I was amazed when they were baking they looked SO PERFECT!     Hi Annie! You may not see this comment since this post is pretty old, but I wanted to ask your advice on freezing these muffins? If I were to freeze after baking, do you think they would be alright, and how would you then reheat them to serve? Thanks!

    Sure they will be fine if frozen. I usually thaw in my microwave on low power in short intervals. You’ll have to play around with yours and see what works best. Enjoy!

    These muffins were great. I made two small changes. I added a couple tablespoons of Greek yogurt and I used 1/2 brown sugar. I think next time I will add chocolate chips. My family is already asking for them again.
