If it were possible to be labeled a popcornaholic, I think I would qualify.  Anywhere and everywhere that I smell popcorn, I have such intense cravings.  When coworkers make a bag of popcorn at work, I nearly always come home and make some the same evening because that craving just follows me through the day.  Somehow I ended up with a husband who doesn’t particularly care for it (which, as far as I’m concerned, makes about as much sense as Ross not liking ice cream.)

So, one might say, I really didn’t need do go and do something to make popcorn even more crave-worthy to myself.  But once I had the idea to dress it up with browned butter, garlic, Parmesan and thyme, I really couldn’t put the idea out of my mind.  It was everything I hoped it would be – popcorn, but better.  So much better.  I’m quite sure one of my best friends would call this “fancy pants popcorn” and I suppose that would be accurate.  But don’t worry if you can’t help eating it in big, less than fancy handfuls.  I won’t tell.


  • 2-3 tbsp. unsalted butter
  • 1 clove garlic, grated (or finely minced)
  • ½ tsp. fresh thyme leaves, minced
  • 1 tsp. olive oil
  • 1/3 cup popcorn kernels
  • 2-3 tbsp. grated Parmesan cheese
  • Salt and pepper, to taste

    Place the butter in a small skillet over medium heat.  Melt the butter completely.  Continue to cook, whisking frequently, until the butter foams, bubbles slightly, and begins to brown.  Continue whisking until the butter is evenly browned, being careful not to burn.  Just before it is finished, stir in the garlic and thyme.  Remove from the heat and let cool slightly.

    In a popcorn popper (I adore my Whirley Pop), heat the olive oil over medium high heat.  Add the kernels to the pot, cover, and cook, stirring, until all the kernels are popped.  (If you don’t have an air popper, try this method for stovetop popcorn.)  Remove from the heat, add in the browned butter mixture along with the grated Parmesan and stir well to coat evenly.  Season with salt and pepper to taste, and stir once more.

    ice cream is too cold! — yess I got the Friends reference. and I know somebody who doesn’t like popcorn because the kernels sometime get stuck in their teeth.
    I never thought of browned butter popcorn but it does sound good~

    Mike doesn’t like popcorn either! Crazy brothers. It’s hard to believe because Robin loves it. I am also a popcornaholic. I make it with the kids a few times a week. I will have to try this soon.

  • about 2 weeks ago, I splurged and bought some of the organic popcorn kernels from whole foods. Wow what a difference in taste, texture and popping. It was so tasty and so crisp tasting. Doing a horrid job at describing here, but I wanted to say, that that purchase made me create a few popcorn recipes. So if you’re ever at whole foods, pick some up–it’s a treat!

    This looks amazing! I can’t wait to try it. I also stopped buying the microwave bags of popcorn. I just put 1/3 cup of popcorn kernels in a brown paper lunch bag and fold the top down twice. No oil needed. Place in the microwave and cook for 2 minutes. Very easy! I haven’t burned popcorn since I started using this method.

  • I would probably eat this just by pouring it from the bowl, into my mouth. Perhaps through a funnel. On second thought, maybe I’ll only make this when the.boy isn’t home so that he doesn’t un-propose to me upon seeing my eating habits.

    I’m having issues with my popcorn. I tried something very similar to this the other night, but I used coconut oil instead on the stove top. My popcorn came out not crunchy. I wouldn’t call it soggy, but not crunchy. I used 3 tablespoon and 1/3 of a cup of popcorn. Any suggestions?

    That is a lot of oil for that amount of popcorn. I usually use about 1 teaspoon of oil for cooking and then add 1-2 tbsp. of additional (butter, or whatever you like) for flavoring after it is popped.
