I hope you all had a wonderful Thanksgiving holiday!  Our scaled back celebration was very nice and it was good to spend quality time with family and friends.  Even though I enjoy traditional Thanksgiving food, I’ve never been one to go back for multiple helpings, stuff myself, etc.  (It’s not a macaroni and cheese or pizza feast, after all.)  However, I know there are lots of people out there right now who might appreciate some lighter fare to balance out the indulgences we enjoy throughout the holiday season.  There are so many healthy recipes that we love, I thought I’d highlight a few options in case you are looking for inspiration in that area.  In fact, our whole menu plan for this week is on this list.  Enjoy some of our favorite lighter fare!

Greek Pita Pizzas

Mexican Quinoa

Tortellini Soup with Beans and Chard

Greek Veggie Wraps

Harvest Apple Spinach Salad

Mushroom, Chicken, Soba Noodle Soup

Halibut with Chipotle Compound Butter in Foil Packets

Quinoa Cakes with Poached Eggs

Panko-Crusted Salmon

Roasted Vegetable Chickpea Salad

Black Bean Burgers

Creamy Cauliflower Soup

Spicy Bean Burritos

  • Just had the Greek Veggie Wrap for lunch today (and will be all week!) – love them so much!

This is actually so incredibly necessary right now! Except… I just had tacos. Whoops.

  • Thanks for sharing! I am going to be making the tortellini soup and the veggie bean burritos this week.

  • Everything looks amazing as usual!!

Funny that you said…”It’s not a macaroni and cheese or pizza feast, after all.” I just posted Baked Macaroni and Cheese Pops because we were asked for Macaroni and Cheese on the menu and I thought for Thanksgiving?!? I decided an appetizer version would be OK. :)

  • Ah, thank you for this round-up. Just what I needed after last week! :)

mmmm, some of my favorite posts!! my mouth is watering at the sight of that soba noodle soup, and the poached egg, and just about everything else :)
