This recipe is one that has been circulating the blogosphere for quite a while now.  I first saw it on my friend Nikki’s blog, and I’ll admit that back then, I kind of laughed about it and continued on.  To me, taquitos were a packaged food from the freezer aisle of the grocery store.  Ben would always want to buy them, I would always refuse…it became kind of a joke between us.  One day I finally caved and he was pretty excited to have them all to himself since I wasn’t interested.  I don’t think they quite lived up to his expectations though because he didn’t ask for them as much after that.  So when I saw this recipe I thought eh, whatever, and moved right along.  But then I started seeing it pop up all over the place and thought maybe they were better than their store-bought counterparts – they must have been to deserve all the hype.

You know where this is going…I made them.  We loved them.  In particular, Andrew reeeally loved them.  He ate as much as I did that night for dinner, and the next night with the leftovers.  The filling is a very basic mixture that is definitely a great foundation for additional mix-ins you might enjoy.  I am thinking about adding black beans, corn and maybe some roasted red peppers to the mix.  Not only will it up the nutritional value, it will help stretch the amount of filling farther, meaning more taquitos for everyone – hooray!  A definite bonus about this recipe is that the taquitos can be assembled, frozen and then baked from the freezer, making them ideal for a quick dinner or as a party food that you can make well in advance to cut down on day-of prep.  In fact I’m making the food for my brother’s graduation party next week and these will be making an appearance.  I can also see these being very popular come football season.  Enjoy!


3 oz. cream cheese, softened
¼ cup salsa
1 tbsp. freshly squeezed lime juice
1 tsp. chili powder
½ tsp. cumin
½ tsp. onion powder
2 cloves garlic, minced
3 tbsp. chopped cilantro
1-2 green onions, chopped
2 cups shredded cooked chicken
1 cup shredded Mexican cheese (cheddar, pepper jack, etc. would also be good)
10-12 6-inch flour tortillas
Cooking spray
Kosher salt


  • 01

    Preheat the oven to 425˚ F.  Line a baking sheet with a silicone mat or parchment paper.

    In a large mixing bowl, combine the cream cheese, salsa, lime juice, spices, cilantro, green onions, chicken and shredded cheese.  Mix thoroughly until well combined.

    Briefly heat the tortillas in the microwave to make them soft enough to roll easily, about 20-3o seconds.  Place a tortilla on a work surface.  Spoon 2-3 tablespoons of the filling mixture down the middle of the tortilla.  Roll the tortilla up tightly around the filling.  Place seam-side down on a baking sheet.  Repeat with the remaining tortillas and filling, spacing the assembled taquitos evenly on the baking sheet.  Spray the tops lightly with cooking spray and sprinkle with a pinch of kosher salt.  (You may be tempted to skip the sprinkle of salt, but it really adds a nice touch.)

    (To freeze before baking, transfer the baking sheet to the freezer and chill the assembled taquitos 30-60 minutes.  Transfer to a freezer-safe container or plastic bag.  To bake from the freezer, simply add a few additional minutes to the original baking time, until the filling is warmed through.)

    Bake 15-20 minutes, until crisp and golden brown.   Serve with sour cream and salsa, if desired.

  • Are those homemade tortillas you used? That is something I think I’ll tackle this week. Have you seen the Spicy Mexican Shredded Pork from ATK…it is WAY spicy (it make me and all my kids cry) but in case you ever want something on the Hot side, that pork could fill one of these taquitos quite well…I think. :)

  • Yum:-) I love all things Mexican. These sound like they are simple to make but have a lot of flavor in them. I like that they can be frozen as well-it seems as though you could make a huge batch, eat some now, and freeze the rest for later.

  • These are one of our favorite things! I made three different versions for a recent party- chicken, a shredded pork (our favorite!) and a vegetarian one with black beans, roasted corn and roasted red peppers. So good! I think I need to find a reason to make these again soon!

    This is one of our family favorites! I absolutely adore them. I usually try to make a larger-than-needed batch just so I can freeze the extras. I love being able to grab 3 or 4 at a time for an easy lunch. I usually serve them with queso and Mexican rice or black beans.

  • Just made these again last night! It’s also a great option to give to a family in need of a meal. You can give them 6-8 taquitos and still have enough for your family. And, give it to them frozen so they can throw it in the oven it whenever they decide they want it. :)

Perfect quick meal, and yes, every single member of my family devours them! I use a rotisserie chicken to make the whole process even easier! Love it! Your pics look delicious!

Our 2 year old loved them and that is huge since he has decided to become a picky eater suddenly (ugh!) My husband and I loved them too, especially dipped in homemade guacamole! Yum!     Food is safe indefinitely in the freezer. Only quality decreases over time.

    These are ABSOLUTELY delicious and a big hit in our house. We are expecting our second child any day now and this was one recipe I had to prep for the freezer…I think I made 16 taquitos to have on hand!! I’ve shared the recipe with other expecting moms and they’ve enjoyed them as well.   • These taquitos are amazing! I made a double batch last night and stuck 3/4 of them in the freezer for easy meals down the road. I also found this great cilantro-lime dressing recipe that we used for dipping them in; it added a nice, cool taste to the hot and crunchy taquitos.

    For the dressing, just throw all these ingredients in a blender: 1 pkg. Ranch dressing mix, 1c. mayo, 1/2c. milk, 2 cloves garlic (chopped), 1/2c. cilantro, 1/4c. green salsa & juice from 1 lime.

    I made these last night for my mom’s birthday party and they were HIGHLY acclaimed. While it took a little while to make them from “scratch” there is absolutely no comparison to the frozen variety you find in the store. I ended up cutting the 6 inch shells in 1/2 for more of a finger food and doubling the recipe. They were gone in a flash with MANY requests for the recipe.

The same old thing is so boring. Anyway, my little brother is sooooo picky. But even he loved these! I’m guessing your free time is pretty limited :), but did I miss it? I found a recipe on a general recipe website that uses 3 c. dried pinto beans, various seasonings and a crockpot to make them.     There is no reason you can’t refreeze the chicken as long as it is properly thawed (in the fridge, not the microwave.) See my post about freezer tips and tricks in the FAQ page for more info.
