Cheesecake is one of my absolute favorite desserts.  It is so delicious and indulgent, it’s pretty irresistible.  The problem for me is that I find a regular cheesecake far too large to have around the house because I, in fact, cannot resist it.  These cheesecake bars are the perfect solution because you can still have all the deliciousness of cheesecake, but in a much more manageable serving.  Also, they are easier to unload on friends and family since they are so portable :)  I made these in a 8 x 8″ pan but the recipe can be easily doubled in a 9 x 13″ dish.


For the crust:
23 Oreo cookies
2 tbsp. unsalted butter, melted

For the cheesecake:
12 oz. cream cheese, at room temperature
6 tbsp. sugar
6 tbsp. sour cream, at room temperature
½ tsp. vanilla extract
¼ tsp. salt
1 large egg plus 1 egg yolk
12 Oreo cookies, roughly chopped

    Preheat the oven to 325˚ F.  Line an 8 x 8-inch baking dish with foil.  To make the crust, place the Oreos in the bowl of a food processor.  Process, pulsing, until the cookies are finely ground.  Add in the melted butter and pulse until the cookie crumbs are moistened.  Transfer the mixture to the prepared baking pan.  Press the crumbs into an even layer over the bottom of the pan.  Bake the crust for 10 minutes, then set aside and prepare the filling while maintaining the oven temperature.

    To make the filling, add the cream cheese to the bowl of an electric mixer fitted with the paddle attachment.  Beat on medium-high speed until light and smooth, about 2 minutes.  Mix in the sugar until well combined.  Blend in the sour cream, vanilla and salt.  Beat in the egg and egg yolk on medium-high speed until incorporated, scraping down the bowl as needed.  Stir in the chopped Oreos with a rubber spatula.

    Pour the cheesecake batter over the prepared crust, smoothing the top with a spatula.  Bake for about 40 minutes, until the cheesecake is set around the edges but slightly wobbly in the center.  Transfer the pan to a wire rack and let cool about 1 hour to room temperature.  Cover the pan and refrigerate until well chilled, about 3 hours.

    To cut the bars, pull the cake from the pan by lifting the foil up out of the pan.  Place on a cutting board, peel away the foil, and slice into bars.  Clean the knife blade between each slice to keep the edges neat.  Keep refrigerated until ready to serve.


  • These remind me of my childhood when I used to make oreo milkshakes with about 12 oreos and minimal milk. Mmmm.

  • Like you, I can’t resist a cheesecake and they are much too large to have around the house. When I make cheesecake I like to have it mile high and will use at least 4 blocks of cheese. … So I haven’t made one in a really long time. These cheesecake looks lovely though, I love the oreo crust.

    First off let me say that your blog is amazing. I stumbled upon it looking for an “Oreo cookie cheesecake” recipe for my brother who requested the dessert for his 32nd birthday. I looked at a few recipes but once I saw your recipe (and the incredible picture), I knew that I’d found a winner. I just took them out of the oven and since I forgot the “Cooking with glass” rule and didn’t adjust the oven temperature, they came out a little brown on the top but that’s ok. I’m just gonna cover the top with an “Oreo cookie whipped cream” and Oreo cookie halves. I know that he’s gonna enjoy this cheesecake. Thank you for this blog Annie…You have a fan for life!

    I don’t think a mixer would work for making cookie crumbs but you should be able to get the same effect by simply putting the cookies in a plastic bag and crushing them in whatever way you prefer.

    Hi. I made these last night and they were really delicious. But mine were not as thick as yours are. I followed the recipe to a T and i used an 8×8 pan. And also, the oreos floated to the surface of the cheesecake. Is your filling thick before you baked it cause mine was liquid-y. Thanks :)

    I always use glass, because that’s all I have, but now I’m thinking maybe I should get metal… I Googled it, and it says something about lowering the oven temperature 25 degrees for glass pans, so that’s what I did/am doing. I hope that doesn’t screw it up…
