Say hello to one of the most brilliant snack foods of all time – the pizza bite.  So many foods become even more fun when they are made mini, and I think this proves that pizza is no exception.  The first time I ever made these, they were a big hit and devoured in no time.  I’ve been looking for a reason to make them again ever since, and they seemed to fit perfectly with the girls’ night/guys’ night theme.  They are sure to be a hit at just about any gathering, but seem really ideal for the Super Bowl coming up!

They are incredibly easy to make.  Start out with a chunk of pizza dough, and just wrap it around your choice of topping – or in this case, filling.  (Of course you can use any pizza dough you like, but if you haven’t already, I urge you to try this one – it’s my favorite!)  I like to fill them with a cube of mozzarella cheese and a couple slices of pepperoni.  I normally don’t really eat pepperoni, but I really like it in these.  It reminds me a lot of these cheese and pepperoni-filled breadsticks one of the bars served in college – amazing!  As for dipping sauces, I go with this classic pizza sauce.  Ranch dressing would be good too, if that’s your thing.  Really though, these are so good on their own I don’t think a dipping sauce is necessary.  I have found that a half recipe of the pizza dough (enough for one pizza) is just the right amount for one pan of these bites (about 20-24 bites).  If you want them to be identical in size, you can use a kitchen scale to make sure you use the same amount of dough for each.  I just rip a small hunk of dough off and try to stay consistent with the size.


½ batch pizza dough (enough for 1 pizza)
4 oz. mozzarella cheese, cubed (about 20-24 pieces)
Sliced pepperoni

For topping:
Olive oil
Italian seasoning
Grated Parmesan cheese


  • 01

    Preheat the oven to 400˚ F.  Lightly grease a 9-inch pie plate or cake pan.  Divide the pizza dough into 20-24 roughly equal sized pieces.  Take one of the dough pieces, top with a cube of cheese and a slice or two of pepperoni.  Pull the edges of the dough around the fillings and pinch closed.  Place seam-side down in the baking dish.  Repeat with the remaining dough pieces.

    Lightly brush the tops of the dough balls with olive oil.  Sprinkle with Italian seasoning and grated Parmesan cheese.  Bake for 20 minutes, or until the tops are golden brown.  Serve warm, with dipping sauce as desired.

  • This gives me all kinds of ideas for stuffing dough. I agree with you on small sizes–whether it’s cookies, rolls, cupcakes or appetizers. People eat them much more quickly. I think we like to tell ourselves there are fewer calories–which there are. Nevermind that we eat bunches of them.

  • These look really good. I have a friend who makes something similar. She calls them stromboli bites. Spread out a refrigerated pizza crust from a can and top it with pepperoni and cheese. Roll the whole thing up into a loaf and bake it. When it comes out she slices them into into 1 inch spirels. Last time she put in some green olives too. They were amazing and devoured imediatly! I will have to try your recipe. I bet the homemade pizza dough makes them even better.

    That is an excellent question. I am not sure, but I think that it should be fine to prep them in advance and then refrigerate them until they are ready to bake. I might consider popping them in the freezer for maybe 30 minutes before transferring to the fridge, just to be sure you prevent the dough from rising again. If you try it, let me know how it turns out.

    Sorry, I’m not a vegetarian – I just post what I eat! You could probably make them on a baking sheet lined with parchment paper or a silpat, though I think they are probably better placed close together so you still pull them apart before you eat.

    Yum! I made these today for a playdate. Since, I didn’t have time to make pizza dough, I used the frozen Rhodes rolls and cut then into smaller pieces before letting them rise and then stuffing them. They turned out great!

  • I’ve been planning on making these for the game ever since you posted them! However, I just realized that all I have is all-purpose flour. I read on Brown Eyed Baker that this flour will make the crust a little less crisp. Do you think this will matter in this recipe? Thanks Annie for all of your inspirational recipes, love your site!

    Hi Erica,
    I always use whatever flour is called for in dough recipes, because it really does make a difference in the texture. Bread flour has more protein and therefore higher gluten content than all-purpose, which leads to a chewier dough. In the case of the pizza bites, it won’t necessarily affect the “crispness” because these really aren’t crisp, but to get that nice chewy texture of good pizza dough, I think bread flour is best. I am sure you can find substitution ratios on the internet if you still want to use AP. Good luck!

    It sounds like the dough just wasn’t pinched tightly enough to seal the bites closed. Mine have always been completely sealed, and I’ve never had anything leak out.

    Thanks Annie – I hosted a ‘finger food’ party for several friends last night, and also did a test run the night before. This recipe was a huge hit.     OMG thank you for this recipe! I hosted a big party a few months ago and made two batches of these for the “midnight snack.” I made them the day before and put them in the freezer; put them in the fridge the afternoon of the party and they baked perfectly. I swear, both batches were completely devoured in less than 5 minutes. I did the same thing for a suprise bday party and yet again, both batches were gone in 5 minutes.     Two thumbs up! I made these for a party a couple of weeks ago and tested the “make ahead and freeze” method. I put them on cookie sheets to freeze (uncooked) and then transferred them to freezer bags. When I was ready to bake them I put them in greased pie tins, finished the tops as directed and baked about 5 to 8 extra minutes. Perfect! Now we have a supply in the freezer to use whenever.   • I made these for the Super Bowl party that I went to with the girls in my grad program. I did half with pepperoni and fresh mozzarella and the other half with spinach, Kalamata olives, feta, and a sweet basil, pesto, and goat cheese spread. The spread wasn’t too hard to put on, and it helped kind of glue the spinach leaves down (though I imagine putting an actual sauce inside would be more challenging). Both were equally delicious! I also made them the morning of and then put them (fully made) into the freezer for 30 minutes to stop the yeast from rising, and then refrigerated them until game time. I thought they turned out terrifically (and they got a lot of compliments!). Thank you, yet again, for an awesome recipe! Who knew pizza dough was so easy to make. :) Mmm!

I guess I would make the ‘turkey ball’ first, bake it, then put it inside the dough and bake it again? thoughts?

    I would recommend freezing rather than refrigerating. If you only refrigerate, the dough will continue to rise too much and then will be too puffed.

    Hi Annie! My children love helping make the pizza bites. They request this meal about every other day, although I don’t let them have it quite that much! Quick question… I’ve always just used your basic pizza dough, not wanting to deviate, but I was wondering whether or not you’ve tried your more recent white whole wheat pizza crust recipe with these? I’d love to add some whole grains to this, but didn’t know if it still turned out well. Thanks!

    I haven’t made these in a while so I haven’t tried with the wheat dough, but it should work just as well as the original dough. Enjoy!
