Alright everyone, get ready for a monumental news flash – I now have a new favorite dinner.  It is these chicken gyros.  While this title was previously held by a simple cheesy pasta dish, the gyros now reign supreme.  To prove it, I will say this – I made these twice in the last week.  I almost made them again this week (and I probably will make them again next week)…and I almost never repeat recipes within the same month, because I just have too many that I still want to try.  The first night I made them, I made them with store-bought pitas and they were fabulous.  Then I made them again a few days later with homemade pitas and they were truly sublime.  I love the cool garlicky, cucumbery sauce, the flavorful chicken, and the soft pita.  It all combines into a phenomenal culinary experience, and the leftovers make a lunch you will definitely look forward to the next day.

Not only are these a treat to eat, but they are fun to make as well.  I get a kick out of straining the yogurt and seeing how much liquid is drained off.  (Elly mentions in her recipe not to use nonfat yogurt.  One of the times I made this, I accidentally bought nonfat and didn’t have time to run to the store for more, so I just used it and strained it anyway.  It actually still tasted fabulous, I just drained off a lot more liquid than normal.)  I used my food processor to shred the cucumbers, since I didn’t think I would be very successful using a cheese grater and doing it by hand.  Definitely the most fun part of making these is squeezing the water out of the cucumbers.  I am sure there are lots of good ways to do this, but I found just wrapping them in a few layers of paper towels and squeezing works great.  Also, a quick note on the pitas – since posting the recipe originally, I have found that I really have to add a significant amount of flour to the dough to make it even remotely workable as opposed to a gigantic sticky mess, so I have edited the old version to reflect more closely what I think I do now.

Now, run to the kitchen and make these.  You will be glad you did!


For the tzatziki:

  • 16 oz. plain yogurt (not nonfat, if possible)
  • 1/2 hothouse cucumber or 1 regular cucumber, peeled and seeded
  • 2-3 cloves garlic, pressed through a garlic press (or finely minced)
  • 1 tsp. white wine vinegar
  • Salt and pepper
  • Squeeze of fresh lemon juice
  • Extra virgin olive oil

For the chicken:

  • 4 cloves garlic, smashed
  • Juice of 1 lemon
  • 2 tsp. red wine vinegar
  • 2 tbsp. extra virgin olive oil
  • 2 heaping tbsp. plain yogurt
  • 1 tbsp. dried oregano
  • Salt and pepper
  • 1¼ lbs. boneless, skinless chicken breasts

To assemble:

  • Pita bread
  • Fresh tomatoes, seeded and diced
  • Red onion, sliced thin

    To make the tzatziki sauce, strain the yogurt using cheesecloth over a bowl. Let strain for several hours or overnight, if possible, to remove as much moisture as possible.

    Shred the cucumber. Wrap in a towel a squeeze to remove as much water as possible. Mix together the strained yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

    To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour.

    Cook the chicken as desired, either in the skillet or with the broiler. (I butterflied the chicken breasts and then cooked them under the broiler.) Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes. Cut into strips.

    Heat pitas (I sprayed with some spray oil and then popped them in the toaster oven for a few minutes). Top with chicken, tzatziki sauce, diced tomatoes and sliced onions. Serve immediately.

    Oh yes, try them, you will love them! The sauce can be prepared at least about 2-3 days in advance, because that is how long I have eaten leftovers. In fact, I think it is best prepared at least several hours in advance so that the flavors really have time to meld. Enjoy!

    I tried these a few nights ago, and while they were good, the chicken didn’t have as much flavor as I was hoping for. I marinated for an hour as per above, but both my husband and I commented that we wished the chicken had more flavor – especially since the marinade smelled amazing. Could I have done something wrong? The only thing different in my marinade from above was lemon juice from a bottle in place of the juice from an actual lemon.

    I’d love to fix this if I can, because there are no places around here to get gyros at all.

    I’m sorry the chicken didn’t turn out as you had hoped. I do think that fresh lemon juice is important, but I can’t imagine it would have been that crucial to the marinade. I have made these several times and the chicken always tastes delicious. I suppose my only advice would be to marinate it for longer next time for a deeper flavor, but don’t do it for too long because the acidity of the lemon juice can “cook” the meat and affect its texture. I hope this helps some!

    The pasta dish I referred to has never been posted on the blog because it is barely a recipe. It is basically spaghetti noodles mixed with an olive oil-fresh tomato-garlic mixture and shredded mozzarella cheese, so that all the cheese melts. Sort of like a bruschetta pasta, without the basil.

    If you make it with two chicken breasts, you will probably get about 5-6 gyros out of that, but will have plenty of tzatziki sauce leftover. If you are feeding more people, you can increase the amount of chicken and marinade but you won’t need more sauce. Hope that helps!

    For those who found the marinade lacking, I suggest adding the zest of the lemon to it as well. It adds so much brightness to everything, and it just might be the thing to bring the zing that you’re looking for.

    These are delicious and its worth the time to make your own pitas. Its clean and fresh and quite unlike your local greasy gyro. I substituted lime for lemon since I didn’t have any but the chicken and the sauce are REALLY good. I must admit my favourite part was seeing all the liquid that came out of the yogurt!     No you don’t need to strain Greek yogurt. It’s just much cheaper to buy the same quantity of plain and strain it yourself.

My husband asked for seconds and said I could make these any day. I will also make them for company as much of it is make ahead…just heat the pitas. Thanks for the inspiration.

  • These gyros came out soooo delicious. The pita took time to make, but was totally worth it. Like you said in your post, I don’t think i will ever buy it from the store again :). Just to make the recipe a tad easier, we bought plain greek yogurt and diced the cucumber very fine, mixed all the ingredients together and let sit for the recommended time without any straining of yogurt or shredding of cucumber. It still came out SO, so good.

    Also– the marinade on the chicken was fantastic! Such good flavor!

    This recipe is amazing! The tzatziki and the gyros were very flavorful. I made a few changes, though. I used thigh meat instead of breastmeat, and I cut them into bite sized pieces and let them marinate overnight in the refrigerator. Then I put them on skewers and grilled them until they were done (about five minutes), and it was absolutely delicious. My preparation was more like souvlaki than a gyro, but it’s the same basic concept and both are absolutely delicious. This recipe took me back to when I visited Greece several years ago. Nόστιμο!

I have what is probably a silly question, you mention these in your stocking the freezer post and I know that you freeze the chicken raw in the marinade; do you also freeze the tzatziki sauce or do you make it fresh everytime?     I just make the tzatziki fresh. I don’t think it would freeze well (though I haven’t tried it). Plus it only takes minutes to whip up. Hope that helps!

    That totally depends on the appetites of the individuals you are serving. The best thing to do is read through the ingredients (mainly the amount of chicken, etc. ) and think how many of your guests that might feed. Multiply as necessary. Enjoy!

    How many does this recipe serve, using the 1.25 lbs. of chicken? These look so delicious! FYI the strained yogurt is called Labneh in Israel. We had an Israeli roommate, and there was always a fresh batch in the fridge! We were so lucky! Greek yogurt is a sufficient substitute, if you don’t have time to make the labneh. :-) YUM! So excited to make this, just need to know if I need more chicked to feed 4 people tomorrow night.

    Amazing recipe, but as a Greek American I feel obligated to point out that if there’s no dill, it’s not tzatziki! You’d be laughed out of the taverna. Add some horiatiki and you’re all set. Tomatoes, Cucumbers, Black Olives, Green Bell Peppers, Onions, Feta, Oil & Vinegar, and a spring of Oregano. Can’t go wrong.

    Tsk, tsk……a lil testy are we? It’s not very becoming. You gave her what she wanted, a reaction. She’s no more authentic than your friend. I love gyros and look forward to trying this. Will consider adding dill once I check out other recipes to see how often it is used. Cucumber, dill…sounds like a win, win combination. Note, to the Greek American, a traditional gyro would use pork or gyro meat made up of who knows what (sometimes beef and lamb at most places that claim to be authentic Greek). At least with the chicken, we know what we are eating. So, prepare, eat and enjoy.

So often people comment that this or that recipe is inauthentic when that is never something I have claimed, so it seems irrelevant and condescending. You might understand the frustration more if it happened to you multiple times per week.

    If you have a fine mesh strainer, you can also line it with a sturdy paper towel.

    we are greek and we make tzatziki all the time.
    we don’t have cheese clothes – instead we take a mesh strainer and put 2 or 3 coffee filters in it then put the yogurt in an let it sit (we usually do ours over night)

    Tzatziki tastes way better if you prepare it the night before you want to eat it!

    Mmmm I tried these and they were so delicious. I used paper towels to strain my yogurt though, as I don’t have cheesecloth. Also used lemon juice from a bottle. Still DELICIOUS!

    Tea towels or cheap cloth diapers work great (but not if you’re planning on using them on baby, too, lol). And bonus: they won’t tear like coffee filters or paper towel.

    Some people like to substitute the strained yogurt in some recipes that call for cream cheese because it is so healthy, and some use the strained yogurt on bagels etc, as a substitute for cream cheese. But they are not the same, the yogurt cheese (Lebna) is more tart than cream cheese and cold be shocking if you are not ready for that! As Annie said, don’t substitute cream cheese, it will be a totally different flavor. (If you don’t want to go through the straining of the yogurt, just use Greek Yogurt which is denser and has less liquid to it, it will be just fine!)

    I’m sure you can strain yogurt. It’s just leaving yogurt in is a sieve that is lined by a cheese cloth or coffee filter over night in the fridge. The sieve is placed on a bowl to catch all the water. Then in the morning you drain the water. Voila. Strained yogurt is as simple as that. You should try it next time you make tzatziki sauce!

    My ex-husband is Greek and has been in the restaurant business for 30 years – and he doesn’t use dill in his tzatziki. Different areas of Greece prepare the foods differently. It’s a matter of preference. If you want to add dill, add dill or add mint, or whatever pleases you. Just don’t criticize someone else’s preferences.

It is one of our family’s all-time favorites and we never have a shred of chicken left.     Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour.

    For anyone wondering: I took my chicken breasts straight from the freezer, put them in a zip-lock bag with the marinade, and let them unthaw IN the marinade in the fridge overnight. Turned out perfect! So, so good. Makes prep much easier for dinner the next night, all you have to do is grill the chicken! (I also make the tzatziki sauce the night before) Thanks for all of the great recipies Annie! I have several of yours in my dinner rotation! I never doubt that I will love any recipe you post :)
