Oh my gosh, I *love* this dinner.  I have been eating this dish for several years.  In high school I was quite the pasta addict, and I bought my dad a pasta cookbook in an attempt to get him to serve it more often.  This is one of the great recipes that came from that book and I am still crazy about it.  I think I love it even more now because it is so simple and quick to make, and feeds us for multiple meals.  I don’t even have any tips or changes to add.  This is just a super yummy and easy recipe that is always a hit in our house.

Tomato and Mozzarella Pasta al Forno
2 tbsp. extra virgin olive oil
2 garlic cloves, crushed
2-14 oz. cans diced Italian plum tomatoes
1 tsp. dried oregano
1 lb. pasta (tubes)
8 oz. mozzarella cheese, cubed
2/3 c. parmesan

Heat oil in skillet. Add garlic and cook over medium high heat, 1 min. Add tomatoes and oregano and simmer rapidly, stirring occasionally until thickened, 15 min. Add S&P. Meanwhile, cook pasta. Toss pasta with sauce. Place half of pasta in an oiled 9×13” dish. Cover with half parmesan and half mozzarella. Top with remaining pasta, then parmesan and mozzarella. Bake at 400° for 15 minutes.

    No, if it needed to be covered I would indicate that. The hamburger idea is really a thing of personal preference. Doesn’t sound good to me, but you can try it and see.

    What kind of parmesan do you use in this recipe? Is this a fresh parmesan or a powdery green can version?

    You could do either but I usually go powdery green :)

    I don’t list serving sizes because the concept of a serving varies so much from person to person. The best gauge is simply to read the recipe and think about the main components in relation to the people you are planning to feed. Enjoy!

    Hi! I’m new to freezing meals… If I were to freeze this would I do everything up to the point where I put it in the oven and instead of putting it in the oven just put it in the freezer? Then would I bake it frozen or put in the fridge to thaw first?

  • Thanks for the recipe! I tried this today and used a Mozarella + a Quatro Formaggio cheese mixture and a tomato, green chilles base. Very tasty.

    I add italian sausage to mine for my boys I personally love it without but is good with sausage. Anyway my all time favorite pasta I could eat the whole pan I don’t I usually freeze individual portions.

    Thanks for the great recipe! I used tomatoes I canned at home rather than the 2 cans called for. Also added a bit of cayenne pepper. Next time I’ll probably add some sausage as well.

    This recipe is wonderful, I’ve made it with “Italian Romano” chicken…loved that too. One tip, use REAL Mozzarella, it will make ALL the difference. A+
